If you replaced about three-fourths of the red beet with even quantities of butternut squash and hard green jackfruit, you'll get better flavor and texture and you won't need to add the baby food because both jackfruit and squash are better at binding than beets. Also, a mix of black, red and pinto beans improves the color a bit. Add a little achiote, porcini mushroom powder, smoked salt, chili spices and fresh herbs, cook it in a low temp smoker for about 30 minutes, then finish it over hot charcoal, and you end up with a veggie burger that hits all the same flavor notes as a really good beef burger, and tastes kinda like a mix between tex-mex chile and really good feijoada.
I started off a few years back with a black bean burger recipe that used beets for color, similar to this recipe, but I found the color a little too intensely purple, so I started replacing the beets. Then, I found the burger a little too bluish from the black beans, so I started mixing in other colors of those too. After years of tinkering, I ended up with the mix I described above. Looks great, tastes great. Most of my vegan friends say it's the best veggie burger they've tried. The smoke and charcoal probably help with that too.

I was in Ohio a couple of years ago and took my break at a truckstop that had a Wendy's. On the menu was a black bean burger and I thought I'd give it a try. Glad I did. I don't know if that was a test market area or not but I've sadly never ran across one again.

I've been a VERY LOW-FAT vegan for 10+ years, and I'm SOOOOO thrilled to see you beautiful people adding more vegan recipes. I can't wait to try this burger! I believe that LOWER FAT vegan is much healthier than "only" vegan, even lower "healthier" fats from plants are often consumed WAAAAY too much. I'm nearly 70 years old and my health has improved SOOOO MUCH not only since becoming 100% vegan, but also from DRASTICALLY lowering the fat content, EVEN of the "healthier fats". So when I make your burger, I'm gonna use some of the techniques I've created over the past 10 years to make it "almost" as delicious WITHOUT frying. (I'm writing a cookbook of healthier comfort food which is "almost" as delicious as "the real thing", i.e., high-fat Standard American Diet recipes, so I KNOW it can be done! My recipes are amazing and truly revolutionary, especially because they are not only vegan, but also incredibly low in added fats, usually under 5 grams of fat for VERY HEFTY PORTION! I APPLAUD you all for presenting more vegan recipes, and also encourage you wonderful & creative chefs to work toward doing the same thing. Americans eat WAAAAAAY too much fat, EVEN vegans with their healthy fats. Tried this last night--the taste was phenomenal! It's not supposed to taste like beef, but there is an earthiness that kind of mimics meat-based patties. However, the texture of the patty has a tendency to squelch out the sides of the bun when you bite down. I wonder if there's some sort of ingredient you could add that would make it hold together more firmly.

I will add a few tablespoons of vital wheat gluten and maybe a few tablespoons of oats. The vital wheat gluten gives it some structure and the oats would soak up some of the moisture. That's how I make my bean burgers.

I really like beets, one ingredient i use that makes the flavor pop is fresh dill or ground dill in a spice can, goes great with beets

What vegan brown sugar did you use? I usually keep it simple, no sugar or added liquids like that; spices like cajun, garlic, onion juice is what I like. I'm not vegan, but I do like bean burgers as a variety. Beets, carrots and brown sugar spikes the glucose level.

Gluten-free panko does exist if you can't find it gf breadcrumbs and I'm thinking about quinoa for bulgar... Beyond that the rest of it is gf or easily found

This is Vegan if you omit the Worcestershire sauce which usually contains anchovies.
Amy’s and Whole Foods have vegan Worcestershire sauce with no anchovies.
I really appreciate the new vegetarian recipes, as I’m trying to move in that direction myself for health reasons. But this recipe just seems so complicated - I’d rather buy a good brand at the supermarket.
What is so complicated about this? Just get all the ingredients, double the recipe and make a large batch with multiple patties to freeze for whenever you want a veggie burger.

I made these exactly as directed. Taste was meh, but ok. Texture was just like every other veggie burger. Crumbly and decidedly not hamburger like at all. Perhaps they could have given an alternative to the baby food which added another expense as well as grossed me out. Maybe I expected too much, but considering the beet mess and long list of ingredients , pretty disappointing.

I made these for a coworker who is vegan. Since he also eats GF, I used GF panko crumbs and subbed quinoa for the bulgur. I also mixed in some shredded vegan cheddar cheese. They were delicious, but they don't taste like burgers; they taste like vegetable patties. So I wouldn't call them burgers by any stretch of the imagination. They are very tasty veggie patties.
However, I finally tried Beyond Burgers this weekend, and I don't know how it's possible, but *they* actually smell & taste like beef burgers! So amazingly good.

I think a vegan burger is good if it can taste good with just some ketchup, like a regular burger. Many of these vegan burgers seem to require all sorts of unusual add-ons and special sauces, etc.

To get stains from your hands just scrub it with an abrasive sponge.

TMI I love when my hands stain red but my luck it literally washes off no problem the stain last only 5min if that ☹️ what is this magic other have to have a hard time removing beet stains

I wash my hands with soap and water. Never had a problem getting beet juice off. 🤷♀️ Just don’t get it on your clothes. Anything else, washes right off.

LOVE the plant based recipes! Please keep them coming! I'm a huge ATK fan, but y'all lost me on this one. I have come to expect that ATK will offer well vetted recipes that have been tried and tried again to bring the best version of the dish to me. This one is way too convoluted, and the texture is horrible! Gummy, pasty, and overall mediocre. No doubt, I'll keep my eyes open for more amazing recipes and techniques, but this one is going in the "never again" file.
Can you recommend a bulgar sub for us who are gluten-free
I'm not a gluten free eater nor allergic to gluten, but you would have to check this for gluten, but barley makes a great sub for bulgar, but like i said, check it out first because i'm not sure if it is gluten free, hope that helps, especially if it is gluten free. Also, lentil beans are a great sub , but i'm not sufe if they are gluten free either. Never hurts to spend a minute to check on google to find out about those two items.

That's a lot of carbs & sodium. Reason i don't buy all brands of vegan burgers. I like cellulose as a binder: gum types & psyllium husk. Gives it meaty bounce. But it was eye appealing. & the pickled radishes gave me some ideas. I would get tired of them after a while they would ho bad. So thank you
Worcestershire sauce uses fish. No vegetarian.
There are vegan Worcestershire sauces.try looking on Amazon if you can't find them in your local health food store.

Sounds like you should do the science and report back to us!
Use parchment paper or a silicone mat on a half-sheet pan and cook them according to other similar vegan burger recipes (probably about 15 minutes on 375 F flip over and bake another 15 to 20 minutes). You should get a decent crust. Pro tip, I never flip them. I just leave them in the oven for the combined time.

I think you could probably do this in the oven and maybe use the broiler/grill setting for a bit for a crust, if you have it

Doesn't Worcestershire contain anchovies?
Some worstcheshire does, usually the more expensive one like lea& perrin etc.., but you will have to use a less expensive one, check ingredients to make sure there are no anchovies, also, vegan/vegetarian food shops or places like whole foods or trader joe's will carry anchovy free worstchesire sauce, hope that helps you friend.

My problem is with the carrot baby food. This food is just puréed carrots. There is nothing magic with it being jarred. Why do you insist on it in this recipe?
