Ghana coconut candy is locally known in as as Kube cake
Ingredients
👉Two fresh matured coconut
👉One cup of sugar
👉1tbsp of Coconut oil (To aid melt the sugar easily)- optional
Coconut oil Recipe: • Organic Coconut Oil | ...
👉1/2 drizzle lemon juice (to damp down the sweetness)- Optional
👉 1 tsp of Cinnamon (optional)
👉1 tsp of Vanilla essence (optional)
👉A pinch of salt

I could remember down home then, the days my mum had to prepare this sweet delicacy for us , it do take her the whole day , due to the fact that she hadn’t anything like a food processor so cutting the coconuts into desired shapes and form manually was a struggle, seeing you doing this process in just a second with your processor tells how far we’ve come
I like that you used your home made coconut oil also, the vanilla powder would give it a very delicious flavour, the candies turned out super good and looks yummy

I like the idea of grating the coconut using the food processor, the ingredients used especially the lemon to quench the sugar and coconut oil which prevents the sugar from burning. The final outcome is absolutely beautiful, delicious looking and nicely moulded into balls. Thanks for sharing sis
