- Hello Darlings and welcome back to another episode of Dining through the Decades! In this week’s episode we are making an English version of a 1930’s Spanish Omelette. It turned out surprisingly hot since I didn’t realise just how spicy Cayenne pepper can be haha! This was such a satisfying, delicious and easy meal to make and perfect for a quick lunch or dinner! I hope you enjoy the video and I’ll see you next week with another cooking episode! Also don’t forget to let me know what other 1930’s meals you would like to see for the next 3 episodes!
Lots of love,
Sage XX
Spanish Omelette - An English version of a Spanish dish! (1936)
4 eggs
½ lb. new potatoes
¼ lb. lean ham or bacon
Parsley
Spring onion
Cayenne or Paprika pepper
Slice the potatoes, fry them in butter and mix them with the ham or bacon, roughly chopped. Season with cayenne pepper and very little salt. Now pour the lightly-beaten eggs into the pan where the potatoes and ham are cooking and continue to cook until they are just set.
Turn the omelette out onto a hot dish without folding it, and sprinkle at the last minute with the finely-chopped green part of a young spring onion.
Enjoy!

Oh lovely! That's called Farmer's Omelette in Germany, where I'm from. The only things I do differently is add just a couple tablespoons of water to the pan when the potatoes cook, and let that cook off before I add the eggs and bacon. It helps them cook much more quickly and less sticks to the bottom of the pan. I also separate the eggs and whip the egg whites until they form stiff peaks, then fold in the yolks, which makes for a much fluffier texture. Yikes Cayenne pepper! That's too spicy for me. I only add salt, pepper, and a little curry powder, maybe some marjoram too (a lovely herb to use with both potatoes and eggs).
Sounds good :D
@@RedRoseSeptember22 It is, it's how my grandmother taught me to cook it. The whipped egg whites especially make a difference. She'd also whip egg whites for making pancakes, or before she used eggs in a cake. It makes things so much lighter and fluffier!
true my grandmother always does that when we go to her cause for us she makes the best one...maybe its because she was a cook once😅 we call it 'bauern frühstück' here in North germany
@@musicissmylife0511 Professional or not, grandmothers are the best cooks. 😊

Sugar apple muffins, stuffed potatoes, and brown bread is my vote. Although, I do say stuffed cucumbers sounds very intriguing, even if I wouldn't eat it, lol.
I second this one!
I concur
Perfect picks!
I feel like rhubarb flan would be interesting since I feel rhubarb is a vegetable that is easily forgotten about but has such great potential!
My grandpa’s favorite dessert was strawberry rhubarb pie… and coconut cake. Lol! He had a sweet tooth.
Im getting lots of rhubarb in my fruit and veg box at the moment. I made an apple and rhubarb crumble last week. It was fabulous. Planning a rhubarb and custard pie this week 😊
Yes! Rhubarb jam is my favourite
I’m a firm believer in serving hot food on hot plates! I set my oven to 200F ( about 95C). You can fill bowls with hot water and put a plate on top, to avoid using the oven….
Would love to see bubble and squeak and the rhubarb flan.
Great video, as always!
These are great choices! I have to rank them lol
1. Bubble & squeak because I never had it lol
2. Brown bread
3. Strawberry muffins
Same here ❤️
love bubble and squeak and it’s really easy to make
Omg this made me so happy to see! I'm from Spain and this is a very traditional comfort food for me. Thank you for making this 💕
Thank you! 💕This english version is probably no where near as nice as the comfort food you are used to, but I hope you still enjoy it! xx
Ooooo!! I would love to see the bubble and squeak!
When I make a potato omelet, I sometimes used sliced baked potatoes. It works really well 💙🙏🏻💙
Stuffed Potatoes
Brown Bread
Stuffed Cucumbers
Onion soup
Too many choices . Can’t wait to see what is cooking next week !!😍
OH it looks very tasty! As a Spanish (from Spain) is cute to see an omelette named Spanish 😊. In Spain, the Spanish omelette is just potatoes fried in olive oil and eggs (optional onion). And we call the scrambled eggs French omelette. Also, we call the omelette in general "tortilla", which is a different thing in America. It is interesting the variety of vocabulary about omelettes around the world :D Nice one Sage, thanks for the recipe! We are going to try and call it Australian omelette at home haha
En Puerto Rico la tortilla es la misma que en España y es para nosotros una comida tradicional heredada obviamente de allá.
When you sprinkled even MORE cayenne pepper on top of the omelette, I had to pause the video and say, "Nooo!" before I could continue watching! 🥵🤯😵 Well...as far as the rest of it, you're a good cook! ☺️
Oh my goodness!!! I love your cooking videos! My picks for the next videos are:
1) stuffed cucumbers
2) bubble and squeak
3) strawberry muffins
Addition of cheese makes it even better!!!!
Here is a list I would love to see you make: brown bread, stuffed cucumbers and onion soup.😋😋😋
Nice choices especially the onion soup, will sage stir the onions long enough? Lol
Sage, just an afterthought, if you decide not to make these videos on brown bread, stuff cucumbers & onion soup can you please write down the recipes in the description. Thank you. ❤😊❤😊
The muffin and stuffed potatoes and the bubble and squeak its sounds intriguing
I would love to see Bubble and Squeak, and the Muffins for the sweet treat.
🙂
This looked really good , my grandmother made something similar she didn't call it a Spanish omelette,, lol... but she cooked the bacon off first, so that she could actually then put butter in the pan with the bacon drippings, then she would cook the potatoes and then she would add the eggs and she often put diced red pepper in it and let that cook and then right before everything was done she would throw all the cooked bacon on the top and a really good amount of some fresh shredded cheddar cheese... it was divine!
I will try this version , ... yes I was thinking that, when you were putting on more cayenne pepper ..." Hmmm it probably doesn't need that , " . ..LOL. But you are adorable, your facial expressions! Girrrrllll... where's your beverage, (??!) LOL!
Cheers from the States.🙂👏🏻✨️😊🙏🏻
My picks: rhubarb Flan? yes! And the stuff cucumbers and bubble and squeak. These 3 make me the most curious!! 😊 I love breakfast food!! Your dish looks YUM! 😋
Okay Queen 👑
Sage I just LOVE your videos and genuinely want you to know how much I appreciate the time and effort you put into each of them! 🥰🌹
I'd love to see either of the flan recipes, as well as the bubble and squeak!
Sending you lots of love from Florida! 💗🌞
My favorite thing about your cooking videos is the very natural way in which you adapt the recipes to be vegetarian friendly. It's the way I also do it, specially since my husband eats meat, so I love finding recipes that I can make the "normal" version and the vegetarian version!
putting in olive oil to prevent sticking was a good idea. Good job listening to your instincts.
Brown bread, curried vegetables are some savory recipes I'd love to see you try. That omelet looked delicious.
Sugar apple muffins, brown bread, & bubble and squeak would be my choices 😋
When you added the cayenne pepper at the beginning... I made an audible gasp because that was a lot 😂😂
I wouldn't mind seeing a bubble in squeak recipe. That looked so good. I bet it tasted even better with cheese
Having it with a fried or poached egg is truly devine x
@@tonkinbray I love eggs and cheese. And he told me I need to try and make this but with cheese and cube the potatoes.
Love your videos! Thank you!
I’d like to see some authentic, quintessential Australian recipes.
Both I and my mother in law still have our high school copies of Cookery The Australian Way. There should be some vintage copies around with great recipes.
Which would largely be British or Indigenous recipes.
So happy to see you back please keep making your wonderful videos
Looks so Yummy ❤️
The Onion 🧅 soup sounds good to me, also the Strawberry 🍮 flan….
Thank You for all your hard work, you’re a doll ! Much love 🙏🏼❤️
Love when you do these decades I don’t want the series to end. This looks super yummy and easy to make! Have a blessed week, Sage! 💜

Onion soup and rhubarb flan!!! 🤩🤩🤩 both seem so cozy and yummy and great for fall which is around the corner! 🌬💨🍂🍁
That pulsating 🔥 fire effect you did on the dish is absolutely the best! Yum yum to this dish!!!
Sugar apple muffins sounds amazing!! And we are definitely apple season in the Uk.
And the stuffed potatoes sounds interesting
Sounds like a good one to try. Anytime a recipe calls for cayenne pepper I put a tiny pinch only 😊 ive been watching your 50s dinning videos. It's amazing the difference your kitchen looks since the remodel. It is so lovely !!!
You're too adorable Sage , the oil part had me in stitches..lol..my pick : onion soup , brown bread ,stuffed cucumbers

Lots of love from Italy
I would love to see bubble and squeak + rhubarb flan! This season is lovely as always ❤️
Ohhh, the muffins and brown bread. But also the bubble and squeak. It's also interesting to hear the different pronunciation of spices. I'm in the US and we say KI- yann pepper, like a kite. It was fun to watch, thanks for doing these.
Strawberry flan and bubble and squeak!!! 😁 love this series.
Ooohh! What a great way to make an omelette more exciting...will have to try this!🍳🍳🍳 Adorable video, as always!
I’m all about savory so all the savory options sound amazing 😋😋😋
Definitely the stuffed potatoes!! The strawberry flan sounds interesting!
Bubbles&Squeak for savory!! That name has always intrigued me. Lol
Great recipe, I'm going to try it this week (minus the cayenne pepper, lol). I'd love to see you prepare the rhubarb flan, stuffed cucumbers, and bubble and squeak (as an American, I had no idea what that was and had to look it up, so I'd especially love to watch that preparation)!
Sugar apple muffins, strawberry flan and curry vegetables!! I love your series by the way 💜💜💜
Strawberry flan.... bubble and squeak..sounds great!
Lovely as always & looks delicious! I vote for stuffed potatoes, curry vegetables, and sugar apple muffins, yum! 🥔🥕🥦🫑🍎
I love your videos. Your voice is very soothing and your bloopers are funny and completely relatable. 1) Strawberry flan. 2) What is a squeak and bubble? 3) Brown bread. Thanks!
One time I confused paprika with cayenne pepper. I learned my lesson very quickly! 🥵
Yum! The muffins and the onion soup.
I’m SO jealous of that beautiful whisk!! And apple muffins sound delicious
Sugar and Apple Muffins, Stuffed Potatoes. I really like this series.
Took me a while to figure out why my omlets got worse need a good cast iron pan.Another good cooking segment.Well Whishes from Ontario. 🇨🇦 Great job by the way for awhile mine turned into scrambled eggs.🙂
Hello from Windsor Ontario!
I've been watching old Julia Child videos and she said you should have a pan you only use for omelets.
Another great recipe. I love rhubarb, so that's a definite pick for me. But the brown bread, onion soup, and stuffed cucumbers also sound quite interesting.
Strawberry flan and brown bread are my choices! 🍽
The Apple muffins ♥️♥️♥️ and the onion soup 🍲 😋
I absolutely LOVE your videos! You always take me to a happy place when I’m stressed! Thank you for all that you do!!♥️
Love this series! Dining through the decades is just amazing. Thank you for the great content, as always. 😊💗
Sage, I love your videos! Please make them more often. Thank you. Love you 💜
Her bloopers are hilarious and even more insightful really showing us the backstory of the final product 😄 also that’s us Americans too when trying to figure out the conversion table so on point 🤣
I love the little moments of impatience, I'm the same way cooking! 💖
I’d like to see strawberry flan and curried vegetables! Onion soup and stuffed potatoes sound good too
I might just make this for today's Sunday brunch. My mum preheated the plates and often they were too jot to touch.. so I never have lol
I am loving your cooking shows! Your music choices are spot on!
Lol you really went in with that cayenne pepper and my Northern European taste buds panicked. 😆
Love your channel! 💖
Would love to see rhubarb flan, stuffed cucumbers, and bubble and squeak next time! This was such a cute episode! I'd like to try this recipe soon.
I like to watch you prepare everything. I learn so much from you!!
I’d love to see bubble & squeak, rhubarb flan, and the onion one. Side question, I’m in the US and this is new to me - potato pizza? Are the potatoes a topping? What other toppings are tasty with potatoes? I agree about uncooked potatoes, not many foods have a less pleasant texture. Always happy to see Mable and Maude, glad they are still giving you lovely fresh eggs. The omelette looked delicious, even with the generous portion of cayenne. 😂 Glad you’ve found a new household favorite. I love this series, thanks for another delightful video.
Potato and rosemary pizza, sometimes with bacon, is a "gourmet" pizza at a lot of places in Australia, it's really yummy because double carbs and potatoes+cheese is always a winner too. It's often a vegetarian option (obv without bacon lol)
OOOOO Stuffed cucumbers sound amazing!!!
Loving ❤️ all the vintage recipes. Greeting from The U.S. I would love the strawberry flan, brown bread and vegetable side.
Im really glad I came across this channel it's so interesting to see how the times has changed and how different times are compared to now.....
Hola!
If someday you want to try and do Spanish omelette (Spanish version hah), use onion instead of bacon and fry everything with olive oil. You’ll love it!
