How to make 1930's Bubble and Squeak | Dining Through The Decades Episode 5 Season 3

- Hello Darlings, in this weeks cooking episode I make a British favourite, Bubble and Squeak! If you haven't tried this before I highly recommend it, it's easy to make and so delicious! I hope you enjoy the video and I'll see you next week for the final episode!!

Bubble and Squeak (from the 1936 National Mark Calendar of Cooking)
Everyone knows the delicious mixture of fried slices of boiled beef and a cake of mixed potatoes and greens. But not everyone knows this refinement!
When you are frying the potatoes and greens, mix them with one or two beaten eggs (according to the size of the cake), cook this thoroughly through and see what a difference it makes.
Black pepper is better as a seasoning here than white, too.
( I added in 50% potatoes and 50% other vegetables including roasted carrot, onion, garlic, steamed peas, corn, carrot and cabbage. Don't forget to add your favourite herbs to the frying pan first with butter and oil to really give the bubble and squeak a delicious flavour!)

My Irish grandmother made bubble and squeak! Served it with soda bread and very strong "builder's " tea.

@The Toys of Childhood, it's just ordinary black tea brewed really strong- "stewed, coddled and boiled", Nana would say. The builders, the construction guys working on building sites, were known for drinking very strong tea.

Before I moved to the US. I used to eat bubble and squeak with breakfast at a local Cafe. I'm gonna have to introduce it to my family! Yum... I like mine with cabbage and carrots. 🤤

We have this every year on Boxing Day and 2nd Jan. I usually chop all the left over begs and bind them with mash potato, pan fry them. Either serve them with left over gravy, or if no gravy - poached eggs on top. Interesting to see there are several varieties of bubble and squeak.
We used to almost live off this when we were kids! It is delicious yes!! Love your videos they really brighten the day!!
This is a wonderful sounding dish. It reminds me of 1 overnight shift at a 24 hour diner I the cook at. After the bar rush We had a lot of small amounts of leftovers of different items not much to use for the rest of the shift so I made a dish for the workers and called it the mess. It had a little bit of everything some turkey pork chops roast beef bacon sausage ham thrown together with potatoes gravy I personally prefer white southern gravy and eggs the most important ingredient here though is the cheese especially in Wisconsin. I no longer cook professionally but still make it sometimes for family and friends. And no one has ever complained that they were still hungry after eating and also it is a great way to use up leftovers instead of throwing them away.
So that's bubble and squeak! Well, I know what's going on the menu this week. Sage, you make everything look so darn delicious! I can't believe there is only one more video this season.

I cannot believe we are already reaching the end of Season 3! It seems we just started. Bubble and Squeak is very similar to 2 American dishes. (1) Southern fried potatoes, where we throw everything, but the kitchen sink in! 😁 (2) There really are no rules about what we bake into a quiche! I generally make it with peppers, onions, mushrooms and sometimes a meat. I serve it with biscuits and gravy. Love the episode! Have a lovely week Sage 🌹

I am going to try this. I am from Michigan, U.S. and my grandmother and mom used to make something similar but they called it "hash." By the way, your kitchen looks beautiful! I love how the wallpaper turned out and the shelves look great!

Any fat left over from roast should be used to fry it in.

In Pittsburgh, Pa is a sweet little diner that makes a super delicious breakfast they call scrambled mess.And I bet you guessed it is very much like bubble & squeak. But no cabbage.One of my favorite breakfasts.
How lovely. I didn't grow up with this, so now I have another idea of how to use up cabbage in the fridge that's not just soups or soy sauce stir-fry, the latter of which I've grown extra tired of 😂

Bubble and Squeak was what we always made with leftovers the morning after Christmas Dinner. Leftover mash, Brussel sprouts, carrot...little bit of minced caramelized onion....sooo yummy

We always cook extra veggies when we have roast dinner- the kids absolutely love it! Making one tomorrow with all the Christmas leftovers! The best thing? You can chuck in ANY vegetables, whether roast or mashed potatoes, green cabbage or Brussel tops! Every time its different! And East Londoners serve it with baked beans and fried eggs with huge mug of ‘ Rosy Lee’! Those who have had ropey ones don’t know what the real McCoy tastes like!
I've never known what Bubble and Squeak was, but often wondered, ever since they mentioned it in Bedknobs and Broomsticks. Now I not only know, but I can make it! Thank you!

And one of my friend's from England who I made my version for is the one who told me the name Bubble & Squeak. Such a cute name for such a great dish.
I love bubble and squeak ! I’m an Aussie, but haven’t had it in years! I’ll fix that! I remember my nnana and pop serving it up! So yummy! The flavours really do change every time, as expected w roast leftovers. I liked mine w some tomato sauce, but will definitely try it w bisto gravy! You’ve brought me back to my childhood Sage! What you just made reminds me of my Mama's Fried Roast Beef Hash! Unfortunately my mother used to bake the living daylights out of her roasts and always cooked them into shoe leather consistency! I never enjoyed her roasts and almost would never eat roast because of that! Now, that being said we almost always had left over roast after the initial meal! So she would cube up the roast into very small cubes and take onions and potatoes and carrots and fry it all up the next day! For some reason her shoe leather would make quite delicious hash the next day! Years later I learned the proper way to make roast in a Crock-Pot and we never have leftovers so that I can make a hash, but this sure did give me an idea to just go ahead and make some just like your Bubble and Squeak dish! Awesome idea, Miss Sage, thank you!!!

No Bisto gravy here, unfortunately. I'll bet it's awesome! I used some leftover sausage and sausage gravy from breakfast, along with leftover mashed potatoes, grilled onions & carrots, and a little cabbage. Mine cooked more quickly than yours, since I was basically just reheating everything, except the cabbage. I omitted the eggs, but I had around 250 ML of sausage gravy (1 cup), which held everything together. It's great! Thanks so much for this idea!

I have heard of bubble & squeak all of my life, but being an American with no living English or Irish relatives, I never knew exactly what it was…. I’ve been missing out! I always have leftover veggies from a roast or steak dinner. I will be making this next time!

@@claremurphy5089 oh yes absolutely! Especially on Boxing Day after the huge day beforehand. Not as common in Australia though because Christmas is usually very hot but some people still do a traditional Christmas meal.

I love love LOVE! bubble and squeek. we have it every Christmas as our boxing day tea - we would the mash special and add the few left over veggies from Christmas dinner. i would always love helping my nan make it and now i make it as my nan cant. it is perfect with the cold meats on boxing day or even better with toast for brekkie the following morning :D and the crispy bits ARE THE BEST! 😋😋😋😋

Bubble and squeak was our go to Monday breakfast when I was a little nipper. We were always upset when we had visitors for the Sunday roast, as that meant we had no leftovers to make bubble and squeak the next day.
I love, love, love bubble and squeak. It was a big part of my Mam's cooking repertoire when I was growing up and I have continued to make it as it is simple and delicious (never heard of the addition of the eggs though which I believe you mentioned that you hadn't heard of before either).
