How to make 1930's Rhubarb & Strawberry Flan | Dining Through the Decades Episode 6 Season 3 Finale

Rhubarb and Strawberry Flan Recipe 1936
- Rhubarb
- Strawberries 1/2 lb.
- Red currant jelly 3 oz.
- Sugar
- Arrowroot
- Cream or ice cream to serve
Pastry:
- 6 oz. flour
- 1 yolk of egg
- 1 teaspoonful sugar
- Little water
- 3 1/2 oz. butter or margarine
Sieve the flour with pinch of salt into a basin and rub in the butter until it resembles fine breadcrumbs. Make a well in the centre, add a little water to the yolk of egg, and stir this into the flour, working it well in.
Turn the pastry on to a lightly-floured board, roll out until it is 1/4" thick and place it inside the flan ring, taking care to press the pastry well into the flutes of the ring or dish so that it will be in good shape. Trim off any surplus pastry.
Place greased paper on top of the pastry and cover with beans or rice merely to prevent the pastry from getting out of shape.
Bake in moderate oven until golden brown. Just before the pastry is cooked, remove the paper and rice, and return to the oven to crisp the pastry.
Cut the young rhubarb into pieces about an inch and a half long, and stew them very gently so that they do not lose shape. (I added in whole strawberries towards the end to partially cook them). Remove the cooked rhubarb and strawberries and make a syrup with some of the juice, a spoonful of red currant jelly and some sugar. Thicken the syrup with a little arrowroot (I used cornstarch), and when it is cooling pour it over the flan and arrange the rhubarb and whole/sliced strawberries in the flan. (Let set in the refrigerator for a few hours)

Yes ♥it really is like stepping back in time when I watch her videos, I really think my mother would've enjoyed this channel, she was born in 1953 and always had great appreciation for that decade. God rest her soul ♥

oh my, this brought me back to being a little girl. my grandma, who was born in the 40’s, always made this for me as a kid with the rhubarb from her garden.
When watching this video, I get the vibe of an old familiar Christmas special on tv!🥰🎄 It just has that lovely classic cozy feel to it.

Rhubarb grows in abundance here in North Dakota (USA). My Mom used to make strawberry-rhubarb sauce that we'd pour over vanilla ice cream, or drizzle over pound cake. She'd make strawberry-rhubarb pie with very light and flakey crust, as well. Your flan recipe reminds me of those wonderful scents and tastes from my Mom's kitchen. Thanks : )

Flan had me confused with the Hispanic dessert, which seems more like a caramel custard. Your recipe looks lovely, but it looks more like a one crust pie or tart. I've never had rhubarb, but heard it was good. Thanks for the videos. You make me want to channel my inner grandma! 👵

I love rhubarb, I tried to get a patch growing in my back yard, victory garden. It didn't come up this summer, so sad! My asparagus is doing great that I planted this spring! I will replant rhubarb next season! I am not giving up on it.

Love your channel Sage! I have fond memories of my grandfather growing rhubarb in the garden and my nanna and pa making us stewed apple and rhubarb. We had it with custard . it was wholesome fuss less cooking. We also had at times, a frozen ‘nannas’ pie left on the bench to thaw and we’d have cream with it. Your rhubarb tart would’ve been lovely! My grandparents were short on time and inclination as they were like 77 when I was 19 years old. I was living with them at the time & Nanna used to make a great trifle! It was a must at Christmas! Non-brandy for us kids! Can you perhaps make an Aussie Christmas trifle soon please?

It is quite lovely to hear the history of decades that I love from the viewpoint of another country/place and compare with what information I've gleaned from my family. Also if you puncture the dough with a fork (Not all the way through) it will help keep the pastry from causing trouble. Sorry if you already knew that. This would be the American equivalent of a Strawberry Rhubarb Pie or Tart. Flan in American is made with eggs and cream. Sage you brought me back to my grandparents farm and grandma's pies 🥧💕Delicious 😋. I'm so sad the Season is already over! Where does the time go...Wishing you all the Best Sage🌹💞

Nicely done! I think people are used to the thick disgusting Pillsbury premade crusts so making pie crust from scratch is surprising to people. You did a nice job. It's a pretty pie too. My mouth is watering just watching this.

I love rhubarb. I grow quite a bit in my back yard. When spring comes around I always have a bumper crop. I like with strawberry, but it's also divine with orange. You can clean & De-bug your berries by soaking them in solution of cool water & vinegar. Soak 10 min, rinse three times w plain water.
I really NEED to try this out. It looks so delicious and I love rhubarb and also strawberries (who doesn't like strawberries ;D).

when making pastry when ur rubbing the butter and flour lift it high up when doing it puts air in the flour better pastry when rolling it out turn the pastry and turn it over so you dont have to much flour on the bottom xx also u dont need to much water to stew your fruit it makes its own juice

I grew up in Florida and now live in Tennessee and rhubarb isn't common in either of those places (maybe in specialty stores or something), so I haven't had it but I've always wanted to try it. Hopefully I can someday! This looks delicious :)

I tried rhubarb back in July and it didn't really have a flavor lol, but that was inside a cake or something, I was told I should try it in pie form so I'll have to do that eventually. :P
