Sugar apple muffins (newspaper clipping found inside my 1930’s cookbook)
“This well-tried recipe wins a lovely pearl necklace for Mrs J. Richard, Inver Hotel, by Ballater”
You require two ounces butter, three ounces sugar, one egg, four ounces flour, one and a half teaspoonfuls of baking powder, quarter teaspoonful salt, quarter teaspoonful cinnamon, quarter teaspoonful nutmeg, half cupful milk and water, two ounces finely chopped apples, little cinnamon and nutmeg to dust top, if liked.
Cream the fat with two ounces of the sugar and beat in the egg. Mix in all the dry ingredients and add gradually with the milk to the creamed butter and sugar. Fold in the apples and fill greased muffin rings or round tins with the mixture. Sprinkle the remaining sugar mixed with a little cinnamon and nutmeg, over the top. Bake in a hot oven (218C/425F) for 20-25 minutes.

You need to let them cool fully so that they can finish “steaming” on the inside and develop a more crummy texture, just fyi! Love all your videos❤️
Who can wait?

I just found your channel, and it is a truly remarkable place to come, and enjoy the relaxing present moment you bring to so many of us. I am just so moved but the feeling I get from this creativity and love for something so unique these days. As someone who lives in the big city and is surrounded by the constant hustle, this truly inspires me to change the things I just don't like in my life and things that make me so depressed. Thank you so much for creating for us and for yourself and willingness to share. Wishing you the best :)
Don't fear the electric mixer, just start slow and gradually increase speed. One mistake like that is a learning experience. You know what not to do next time. The bigger bowl would have helped the first time round too. It's all a learning curve. Just like overfilling the tins following an old recipe is. They were tiny then compared to the modern muffin. Also, it was the depression followed by war the bits of apples (seasonal), butter, eggs & flour (rationed) were really stretched to a degree that we can't imagine now, for now.
I definitely thought that too, that our modern muffin tins would be massive compared to the 1930s. If you half filled them maybe? Or made tiny weeny ones using a mini cupcake tin, they're be so cute and would cook faster too.
I agree with not filling them as high. I remember making muffins when I was a kid and you would only fill half way. Her mixer seems silly fast. I hope she could find a vintage stand mixer, that would be perfect in her kitchen!
There's muffins look so delicious my stepmom she loved to cook she sadly passed away 3 days ago from cancer she loved and loved loved cooking I miss her so much.... I hope you had a great day or night love you girl💜💜💜
I’m sorry for your loss.
She sounds like a great person.
My stepdad has cancer and it’s changed him from being super fit, to a frail old man in less than two years.
Start mixer on lowest speed, then gradually increase as your ingredients blend more. Blend it on counter opposite wallpaper for extra protection. Muffins looked great!! Will definitely have to try!! Thank you Sage!!
Ahhh. I love this. September is just around the corner and is truly the season of apples 🍎 🍏, can’t wait to watch and to try!
Oh my goodness! Can't wait for this one! Apple picking season is just beginning in our part of the world, and the fall air is starting.🍂 SO in the mood to bake something with apples... Your recipe will be perfect!!!🥰
Yes this recipe came in the perfect time! I can't wait for me and my fiance to take my kiddos apple picking this year. They're 2 and 3 so we finally get to start doing things as a family 🥰
Hello, um just wanted to mention in my experience and most recipes I have used, the apple needs to be peeled before adding to the batter. Just saying.
Thank you for this series, I so enjoy it! Have a lovely day!
Thank you, Sage, for all of your planning & making these videos. I don't want them to end. Was wondering if you are working as a nurse between videos. You handle work & presenting us with such wonderful things to remember & learn! 🤗
Aw thank you so much Becky! I am currently on nursing placement and going to university between making videos! xx
@@SageLilleyman Blessings, Dear Sage!
Love watching takes me back to 50s when I was a child. Just noticed your scales i have the same one i bought 1978 in cream colour still use them 44 years later
Hello lovely human ♥️
Baker here.
A tip for baking! Things continue to cook after you take them out of the oven. That’s what the rest time is for. If something bready like muffins or cookies looks right on the edge but not totally cooked, let it rest. It will most likely “set up” during that time. And if not, there’s nothing wrong with putting it back in the oven even after it’s cooled!
I always love your videos!!! Here is a tip my mom taught me for the electric beaters: put the bowl in the sink and mix there so if it splatters, who cares because it is in the sink!
Made these this morning. Delicious!!! Great with my coffee. Thanks Sage!! 😍
Ohh yayy!! So glad you enjoyed them! 💕
I just made these. I beat the butter and sugar, then the egg, then gradually beat in the milk and flour mixture. All with an electric mixer. It fluffed up nicely and made 9 muffins. And they are much fluffier than yours turned out. I think that's what you were missing. Also I let them cool for 10 minutes before eating to finish cooking. Excellent recipe! I also doubled the cinnamon. :)
One of the best things I ever did was learn how to cook. (Of course there is always more to learn.) It adds so, so much to one's life to be able to be intimately acquainted with how one's food is made. I love watching you cook and learn!
Now we need a video of ya'll making a scarecrow to protect the poor chickens lol
Your videos always make me happy. You are going to make a wonderful nurse.
Oh thank you so much! ☺️
I purchased the same cookbook. I'm in the US, so I want to verify measurements since we use a different system. I read the Imperial system was used at this time...if I read correctly.
so funny when u talk about mixturing spill out every where😂
You are just too sweet! There are times in your videos where it shines through how young you are, but I love that! We all learned the same way sweetheart! I also catch the Aussie terms now and then. You left the butter on the bench? I hope nobody sat on it..giggle. I can't wait to try this recipe myself! Happy Holidays Sage! Much love to you and your hubby.🍒🍒💕💕🙏🙏
What I do at work is to start creaming the butter and sugar on a low speed (in this case, start it by hand) so it doesn’t fly everywhere, then mix it on the proper speed until its done. 😉
Poke mixer attachments through an upside down paper plate to keep from splattering your lovely wallpaper and surrounding areas 👍 Always enjoy your content 🙂
I've been watching your channel for some time. I just wanted to say that I love what you're doing, keeping this era alive. Your hair is so pretty.
Thank you so much! 😊
As I've been watching your dinning through the decades I've been wanting my own cook book from the 1930's looking at various ones online and realising how expensive they are I thought I'd wait and save for one. Then tonight I realised that I actually had my grandma's old cook book. Researched it online and its from 1936! It's called cookery illustrated and household managemen. Will be a good read 😀
Seeing your face at the end... all worth it Darling. You are doing great itsbonr of those things the more you do the more confident you become. Well done for a fab video as always xx
I’m so happy I found your profile! I immediately subscribed
Sage, thank you so much for all your lovely videos. I'm currently recovering from my 2nd total hip replacement in 8 months, this one wasn't a pleasant surgery or first couple of days, and your videos are really helping me through while I recover. I'm binge watching your channel and planning all the lovely recipes I can try when I've recovered. You'll make a lovely nurse, I wish you'd been there last week when I was in hospital- I feel you'd bring such positivity and be so caring and gentle. There were some real dragons on last week, including the first night when I was crying all night with the pain! Thank goodness that wasn't my first surgery or I wouldn't be back for the next one!
My mother taught me that every oven is different depending also on the altitude of where you live into how long you leave something in the oven. So, the fact that the muffins needed a longer time period to bake was probably for the difference between the oven you used and the oven that was used initially for the recipe. By the way, great job, they look delicious!
@@pcoristi Oh yes indeed! I find that amazing as well.
Good point
Hi Sage, I love your channel. You’re a pleasure to watch on your days back in time. I thought I would share a tip my mother taught me to blend the sugar and butter together with the mixer. First, beat your butter with the mixer for a minute or two to make it soft and fluffy, then add a portion of your sugar (1/3 to 1/2 of it) to the butter slowly while mixing to incorporate it into the butter. Once incorporated, add the remainder slowly until done. This method prevents the dry ingredients from flying up out of the bowl when mixing in the dry ingredients. I hope this helps. I’m going to try your recipe for these muffins this weekend. Very nice job! They look delicious.?Thanks for sharing.
Watching this from the car right now traveling from Wisconsin to Minnesota 🍎Apple 🍏season 🍎is just about here... perfect timing 💖🎊🌈🎉💖
Ohh how exciting, safe travels!!
@@SageLilleyman 🤗thank you Sage💖 Returning my daughter back to 🏫 school. I am so happy I got to see you ❣️
The recipe sounds lovely! Apple and cinnamon is a classic combination 🍎 🍏
Those look delicious! It's apple time where I live in the US and I'm always looking for a good apple recipe. Thank you for another lovely video, Sage. The highlight of my week. ❤🍎
Apple muffins look delicious. But your henhouse!!!! 🥰🥰🥰🥰🥰 It's ADORABLE.
Hehe thank you!! 🥰🐓
I used to make applesauce muffins that were very good but I'm thinking that apple chunks will give them a different texture. Thank you for making this recipe - I voted for it - and am looking forward to making it. My go-to muffin recipe is one that I got from my husband's grandmother and it's over 100 years old and quite delicious. I always sprinkle sugar and cinnamon over the tops. That gives it such a wonderful texture and flavor.
I love Sage Lilleyman!!! Keep being you!!!
My goodness I am so smitten with you. I live for your bloopers.
I love the way you inspected the muffin after taking it out of the pan!! 🤣
Lol
I'm pretty excited to make these.
You're so adorable and fun to watch.
Thank you for making such lovely videos.
Im always here x when i struggle to sleep x I find your videos very relaxing x Loving your outfit too :)
You are a joy to watch but ruining my diet. Thanks for another great video.
Quick recipes are my favorite. Recipe sounds good. Thanks for sharing.
I am taking down cabinet doors watching this from my 50s kitchen. Making it look like a 50s kitchen. My bloopers are not as video friendly, lol! I love your show, Sage! Thanks you
Lots of love from Canada and stay safe ❤ love this series
Those would make a yummy breakfast ♥ or snack hehe. I would've definitely doubled or tripled the recipe!!!
Good Afternoon & greetings 😊 from York, South Carolina USA!! 🥰 Luv your channel here!!
My 5 year old is eating a doughnut along with you and copying what you're saying. Haha she loves you 😘 ❤
Ohhhh, God Bless you for graving us with another exquisite video !!! You made my whole day, week, month !!! So thrilling to hear you n learn from you n watch you being funny sometimes!!! Thank you!!!
Hi Sage! 💗 This video is just wonderful as always! Thank you for all you do! 🥰
Apple season is in about five minutes where I live in the United States of America. Thank you for this very brave display of learning at such a good time of year for me :)
Side note: Your opinion of how cinnamon should be used vs how it's written in the recipe aligns with my beliefs. Also, garlic; One clove is a joke , always at least two.
😂😂
Sage, go look for a vintage stand mixer. It would be perfect for you and look darling on your counter :)
I’m going to do it!!! 😍
Loved the video and found the outtakes to be priceless! Another fine video.
Thank you so much!
Woo hoo I made them & they were delicious! Thank you for all the great content & for someone who never did anything like this at all it was good to see someone making it real But I now need a 1930s-1950s vintage apron !! Have to see if I can find one in our charity/thrift shops xx x
I made the stuffed mushrooms from last week (????). They were so tasty
Yayyy!!!! I'm so glad you enjoyed them!
Your videos are so fun! I enjoy them! Hugs from Montana
I love apples with cinnamon. Yum. I bet those are delicious. Thank you for the video sweetie 🍎🍏💞❤💚
Yeah this was awesome, I love Apple anything. Especially with cinnamon, it makes me want to make snickerdoodle cookies 💞😊
If u put a dish towel on counter than put your cutting board on it, your cutting board won't move it's a safer way to cut food
So true!
Those look and sound delicious.
I will make this recipe again for certain! I tweaked the recipe a bit, using pie spice instead of cinnamon and nutmeg separately. Will also add the apple in after the batter is in the tin so I can distribute them more evenly. :)
Two little tips, mixed butter and sugar together with a fork, and use an ice cream scoop to put into tray
Love this! Will try these with my granddaughter
The muffins look tasty. Maude is cute, running or her house. ;)
Yay,can't wait to see new video of you
Start your mixer on lowest speed, then gradually increase the speed as everything blends in....
Let your muffins cool down completely, before you remove them from the tray, they will turn out nicely.
You're getting better with that mixer!
This looks so good! I can’t wait to try this!❤️
Gonna make these! 😍
Good job going for it sage, in the end they came out great and you had fun making it🙂
Thanks for such a fun video! They look so scrumptious!
A lovely video, as always!
These look delicious. I love all your videos.
This looked so yummy! I’m excited to try it out this weekend:)💜
Perfect homey video to conclude the day with ❤️
Those muffins sound so good and a nice easy recipe too. Thank you
I just went apple picking for the first time of the season and just used those apples. I need to go again and get more apples.
Yummy!! As soon as I get my own kitchen, I am making these!! ❤💚
good job!! They look yummy!!

I have been so busy I missed the video 3 days ago! 😢 And Yum! They look amazing. I would have modify the recipe as I am allergic to cinnamon 🤧 Have a lovely week Sage!🌹
Great video! 🍎
Delicious, you made it look very easy!! Love your channel… I’m subscribed 😀
This is completely unrelated to the video but I was wondering if you could show us your hair care routine at some point. It looks so healthy and silky.
Yummy yummy yummy 😋🤤 not something I go for but I would like to try this! Love these series Sage!

Simplesmente Espetacular Maravilhosa Magnífica incrível...
Thankyou so much for sharing this recipe I'm definitely going to be making these alot! I'm a stay at home mum with a two year old son so this will be a great recipe we can do together ❤️
Looks Delicious .Great video Sage still watching from Ontario. 🇨🇦
Thanks so much for watching Tim! 😊
@@SageLilleyman also watching from Canada!
I enjoy your videos
they look so good! Its likely that when you cut through with the knife it made it look like that. certain fry breads have that issue. you have to break them apart when hot or the hot knife turns it to goo
I love your videos - you are adorable :) When you were testing your muffins with the cake tester, I wanted to move it to the middle of the muffin rather than the outside - much better place to test :)
I noticed you used a modern muffin tray, in the old days muffin trays used to be a lot smaller. Even since I grew up they have got much bigger and I am only 34 years old. So that is one of the reasons why you could not make many muffins.
Thank you for so much 😊❤
I love your videos 🙂🙂
Can you please start listed your outfits as well please??? I love this one!!
I know! This outfit was adorable!

My. Mom made home-made donut dusted with sugar or cinnamon sugar or left them plain. She said her secret was cinnamon and or nutmeg in the batter. They were far an above store bought ones of today. Perhaps you could find a recipe from 30s-40s. Donut were a popular breakfast in the US anyway. Thanks for another enjoyable video. Of my cake or muffins don't spring back when lightly pressed with a finger tip, return to oven a short time. I turn off oven so as to not over dry the baked goods.
