    Just binged a whole bunch of episodes and made a list of all the meals I’m gonna cook for my family. Sam’s personality is so great. I would love to see him on a Hot Ones episode just to enjoy the banter between he and Sean that would be guaranteed to occur.

      Right. I think too many videos out there advise just using plain burgers with salt & pepper (obviously, they'll recommend a brisket / chuck blend most of the time), but you can do ANYTHING to the meat as long as 1) it doesn't destroy the fat (20-30% ratio), 2) Doesn't prevent the meat from forming into a patty. If you can marinate ribs, steak, chicken, pork - you can apply the same treatment to a burger.
      Fat is a wonderful vehicle for imparting flavour - if you can infuse it, it'll change everything.

      There are many many recipes for Vegan burgers.
      Try one, you will find vegan is so much better.
      Meat is unnecessary.

    You have, single handedly, made me drag out my air fryer and put it to use! I've also made several of your other recipes. For a single guy...this is great stuff. I recently had dinner at one of my favorite restaurants in Atlanta. Houston's (Hillstone Restaurant Group) has been "consistently consistent" since the day they opened over 30 years ago. I've been to several cities where their restaurants are located and...they are great. I had the Hawaiian ribeye the other night with a house salad and a loaded baked potato. It was WONDERFUL. I've downloaded their marinade recipe and followed it. Mine might not have been as good as theirs but it was really good. Maybe a suggestion for one of your shows to look at their menu.

    Soy, salt, pepper, garlic...this is how I do my steaks, marinated overnight then allowed to come up to room temp before the cast iron magic. While it's resting, butter slabs get added, and it sits for as long as it was heated. All you need then is a solid baker with cheese and de-glazed drippings and a dark beer. I prefer Späten Optimator when I can find it, Shiner Bock when I can't.

    Looks great. Never marinated mine before. I've been making pup style smash burgers for years, imo they're the best burgers in the world. These days only cook good food once a week or so, but I'm obsessed with discovering and eating the best foods the human race has to offer. I cant hardly control myself around hyper palatable food and I'm already obese, that's why I dont cook often.
    My only critique for possibly a tastier burger here would be slightly small/thinner patties, then just use 3 patties of them if you want that same meat volume. Thinner patties create a greater fried surface ratio which increases the flavor that set smash burgers apart.

    The Makers is a good choice being a wheated (sweeter)bourbon. Im curious how a rye forward bourbon , maybe standard Four Roses Single Barrell (35% rye), would go with these. Maybe instead of BBQ rub use a spicy rub and add some Fresno chilis or Jalapeno peppers. Id like to see how the high rye (spicy) plays w the a more heated rub. Great job as always!

    Not very smashed for what I know of smash burgers. They always have way more holes on the edges as if it is fresh ground and smashed down as is, not pressed and smashed. This to me is a regular burger.

    man when I first had a burger, i used to think that a 8oz burger was the bomb.. but taking that 8oz and splinting in to 2 amazing crusty burgers tastes SOO much better. I love making smash burgers over traditional burgers and can't wait to give it Sam's spin on a smash burger.

      This is why I normally avoid watching Sam unless I just ate. If you're hungry, it's torture to watch, if you're not it's great fun, and if you're trying to eat while watching you'll probably end up disappointed by what you're eating v what you're seeing lol

    OK, I'm stupid. I don't understand why SMASH BURGER cooks pile on as opposed to serve as is. I love smash burgers, one layer thick. Spectacular flavor, plus fast cooking. I also don't smash my burgers in the pan, but in the plastic bag they were frozen in as a 1/3 pound burger. Yes, I do use cheese sometimes but more often tomato, lettuce, jalapenos and ketchup. Call me a smash burger virgin!. Enjoying my first experience again and again.
