  • Easy Tasty Chicken Palao Fiji Indian Style
    Ingredients:
    2kg chicken cut into pieces (washed and drained)
    2 sprigs of curry leaves
    1 medium onion chopped
    1 tbsp crushed ginger
    2 tbsp crushed garlic (approx. 8 cloves)
    1 large chilli crushed
    5 crushed cardamom pods
    10 cm piece of cinnamon stick, broken into pieces
    6 cloves
    3 cups of rice (washed and drained)
    salt to taste
    7 cups of hot water
    2 tbsp soy sauce
    3 tbsp palao masala (from any indian shop)
    2 tbsp oil
    1 tbsp butter
    1 tsp mustard seeds
    1 tsp cumin seeds
    Method:
    1. Take a pan and put on medium heat, and heat 2 tablespoon of oil.
    2. When the oil gets hot, add onions and curry leaves and fry until you get a nice golden brown colour.
    3. Add mustard and cumin seeds, and cook for 30 seconds.
    4. Add cinnamon sticks, crushed cardamom pods and cloves, mix and cook for further 30 seconds.
    5. Add chicken and salt, mix well, cover with lid and cook for 15-20 mins, stirring twice during cooking.
    6. Give it a mix, and add your palao masala, soy sauce, garlic, ginger and chilli paste, give another stir and cook for a further 5 minutes with the lid on.
    7. While the chicken is cooking, wash the rice and drain all the water.
    8. Mix well, and add rice, hot water and butter, give it a quick mix, put the lid on and bring it to a boil.
    9. Once it starts boiling, give it another mix, and taste your salt.
    10. Put the lid back on, lower the heat, and simmer for 25 to 30 minutes or until the rice is cooked and all the water is absorbed, stirring twice during cooking.
    11. After 30 minutes, give it a mix and turn the heat off
    12. Garnish with coriander leaves.
    13. Enjoy with your favourite salad.

    Onion salad
    Cut salad onion and add salt to taste, add chilli powder and white vinegar (2 tsp) mix well and serve with palao.
    Tips:
    • Left over palao can be stored in the fridge for up to 5 days in a sealed container, or frozen for up to 3 months.

We used to go to the muslim weddings to eat the palao all thbe time, until a muslim chef who used to cook for muslim weddings in Fiji came to our house over 40 years ago and showed my Mum how they made their palao.     I tried this last week and a hint of soy sauce actually worked out great. Even with brown onions my pulau never had that dark colour and was a bit blend as i might have been lacking on all the masala but following your ingredients it came out perfect.

    Anita this is wonderful I use this recipe all the time and it’s perfect. How would you change it if I wanted to replace chicken with lamb. Different durations / quantities / advice on cuts etc?

      Dear Mattbrayau, I am glad you love my recipe. We also use lamb shanks or goat meat for making the palao . You can use any cut of lamb for this recipe. With lamb shanks, have it cut into curry size pieces and cook it a little bit longer until tender and the rest of the recipe is the same. Regards Anita.

    Hi Anita, this recipe is great! I followed your recipe steps except that I cooked it all in the Instant Pot, at step 8 added only 3 cups of water and the butter, brought to a boil and then cancelled saute to high pressure for 6 minutes and then warm for 10 minutes, quick release and then stirred gently, added the cilantro and served! It was a hit with my picky family!
    Any chance you could post an authentic recipe for cabbage/gobhi curry? The quick stir-fry kind? I just can't seem to get it right, I'm not a good cook here and so any help would be very much appreciated! Thanks :)

    Thank you for the recipe. I used lamb shank instead of chicken but came out good. I just had question in-regards to the rice part. Would it affect the consistency of the rice if I stir fry the raw rice first with some ghee and spices and then pour in the meat?

      Dear Evelyn, My Mum makes palao using lamb shanks and goat meat as well. It is delicious. Soya sauce is added for that lovely brown colour otherwise the palao has a dull brown colour and does not look very appetising. Regards Anita.

      Dear Leba, First you will have to cook your lamb shank until tender before adding the rice. To cut the cooking time you can always cook the shanks in the pressure cooker first. Just a suggestion. Regards Anita.

      Dear Nita, Just to give the palao a nice brown colour , I use soy sauce. It is my family recipe. You can always omit soy sauce if you like. Regards Anita.

      Hi Anita! I didn't think of that. I appreciate that it is your family's recipe. The brown color for a palao should really come from onions. The general rule is to slowly saute 2 large onions slowly for a long time for color and flavor.

      Dear Nita, Thank you. When it comes to cooking, I love any cooking tips and advice I can get. I understand that there are so many different recipes for chicken palao, by slowly cooking the onion for a long time for colour and flavor will completely change the taste of the chicken palao. The flavor for the chicken palao in my recipe comes from the palao masala. As with any recipe, one can always change the ingredients and cooking method to suit one's individual's taste. My Mum cooks her onion for the palao to a darker brown colour compared to mine. Regards Anita.

    Looks good, except i don't know about soy sauce in Fiji pulao. It's unheard of. Thanks for the video

      Dear moez, Soya sauce is added for the colour. It does not change the flavour at all. This is how my family has been making palao in Fiji for a very long time. You can change the recipe according to your own taste. There are so many different types of palao recipes in Fiji. All I have done is shown the recipe that I follow, that has been in my family for a very long time. You just have to find one that you are happy with and stick to that recipe. Regards Anita.
