Easy Chicken and Potato Curry Fiji Indian Style

  • Easy Chicken and potato curry Fiji Indian Style
    (Serves 6)
    Ingredients:
    • 2kg chicken cut into pieces
    • 3 medium potatoes, peeled and cut into chunks
    • Oil for cooking
    • Salt to taste
    • Hot water
    • 1 large onion, chopped
    • 2 tbsp minced garlic
    • 1 tsp minced ginger
    • 2 sprigs curry leaves finely chopped
    • 1 chilli, chopped or (1 tsp chilli powder)
    • 1tsp turmeric
    • 2tbsp curry powder
    • 1tsp cumin seeds
    • 1tsp mustard seeds
    • 2tsp fennel seeds (dry roast and grind into fine powder See Tip)
    Method:
    1. Put your pan on medium heat and add 2tbsp oil and heat for 30 seconds.
    2. Add onions, curry leaves, cumin and mustard seeds and cook the onions for 2 minutes or until translucent with the lid on.
    3. While onions are cooking, take a small non-stick fry pan on low heat and roast your fennel seeds until you get a nice brown colour.
    4. Cool for 5 minutes and grind it into a fine powder using a mortar and pestle or a grinder, and put it aside.
    5. When onions are translucent, give it a quick mix and add chicken, 2 tsp salt, and chillies.
    6. Mix well and cook for 15 -20 minutes with the lid on, stirring twice during cooking.
    7. Add curry powder and turmeric and mix well and cook for 5 minutes without the lid.
    8. Add about 1.5 litre (6 cups) of hot water
    9. Bring it to a boil, lower the heat and simmer with lid on for 5 minutes
    10. Add potatoes, ginger, garlic and fennel powder, mix well and taste your salt
    11. Put the lid on and bring it to a boil
    12. When it starts boiling, lower the heat and simmer for 15 minutes or until potatoes are cooked.
    13. Taste you salt again and turn the heat off
    14. Garnish with coriander leaves
    15. Enjoy with rice, roti or pooris.
    Tip:
    Take 2 teaspoon of fennel seeds, dry roast it for 2 minutes on very low heat or until an aroma is released. Cool it down,grind it into powder and store it in a sealed container until required.

    I live in New Zealand and work with a group of hard working Fijian Indian guys. We share food at lunch and often someone brings a lovely gold curry, so I am so glad to finally find this recipe. In that way I can make and surprise them with food from their home land! Originally, I am from South Africa and I always love it when someone foreign makes food from my home; it makes me feel special. Food brings us together!

    Just made this curry. Absolutely incredible!! The only thing I didn't catch was when to add the chilli. I ended up just putting it in with the potatoes when I realised it was still sitting on my bench. 10/10. Will be making this again. And again. And again.

If you are using fresh chilli, you can either add it with the onions, or you can add it with the chicken pieces, but if you are using chilli powder then you can add it with the curry powder.     Anita this recipe is very tasty! I made it, and I like the taste of the fennel in it. I've never used fennel before, in chicken curry, but I've used cardamom; it also gives it a lovely flavour.

    Hi Aunty, do you have a recipe for chicken without masala. I remmber eating it a lot growing up. It was made with tomatoes, pick me up sauce and potatoes sometimes. I dont really know how to make it though

      Dear Nazal, Sorry , the only chicken curry without masala that I grew up with was chicken in soya sauce with carrot, celery and plenty of onion. My mum used to make this when we did not feel like eating any type of masala curry. Regards Anita.

If you are using fresh chillies, you can add it with the onions or when you add the chicken and if you are using chilli powder then add it when you add the curry powder. Hope you enjoy this recipe.       Dear Flesh, I have only tried pot roasted chicken feet , but you can use chicken feet if you like. When my Mum makes curry using fresh chicken, she always adds the feet , and I must say that they taste amazing. Let me know how they turn out. Regards Anita.

    Why use curry powder?

      Dear Chibi, You can not make curry without curry powder. I use the term curry powder instead of masala for my viewers you do not speak and understand Indian. Homemade spices is called masala while the store bought is called curry powder. The only difference is homemade curry powder does not have any turmeric in it. I always use homemade curry powder in all my curries. Regards Anita.

    This is actually NOT Fiji style chicken curry.
    We actually cook our spices first to bring it's aroma before we add chicken. And we don't use fennel seed either.
    We use garam masala. It's a nice recipe thou.

      Dear rose, How can you say that this is not Fiji style chicken curry. This is how my family has been making it in Fiji for over 100 years and as with any curry there are so many variations. Every body has there own recipes and it is up to an individual as to which recipe they prefer and want to make. Regards Anita.
