My Quick and Easy Chicken Curry Recipe | Perfect Family Dinner

  • A quick and simple mild chicken curry recipe with bags of flavour. Ready in 30 minutes, it makes a great go-to mid-week meal for the whole family.

    Ingredients for the chicken curry:
    2 tbsp vegetable oil
    3 chicken breasts - - (approx 500g/17.5 oz) chopped into bite-size chunks
    1 large onion - (or 2 small) peeled and finely chopped
    2 cloves garlic - minced
    2 tsp minced ginger
    2 tbsp mild curry powder- go hotter if you prefer
    1 tbsp ground coriander
    ½ tbsp ground cumin
    1 tsp paprika
    ½ tsp ground cinnamon
    1/2 tsp salt
    ½ tsp black pepper
    2 tbsp tomato puree/paste
    14 oz (400g) tin finely chopped tomatoes
    1 cup (240ml) chicken stock
    14 oz (400ml) tin full fat coconut milk
    1 tbsp cornflour mixed with 2 tbsp cold water to make a slurry - optional
    2 packed cups (60g) baby spinach
    To Serve:
    Boiled rice
    Fresh coriander
    Chilli flakes

    I am an Asian (Bangladeshi), I can tell this curry will taste good. Try with garam masala though next time Nikki instead of only cinnamon powder. Garam masala is a staple of any meat curry ( it's a blend of cinnamon, cardamom, cloves atleast and more, depending on of the cook .... from India, Pakistan or Bangladesh) . Thanks Nikki.     Mine turned out very watery. Even with three loads of the cornflour mix it made no difference. Not sure what I did wrong

    I would rather add real tomatoes .And leave the curry for at least 24 hours .Looks great.

    Added garam masala instead of the cinnamon, and put some chopped spicy peppers in with the garlic and ginger. Very good taste overall though for my first time making chicken curry. Thank you for the recipe!

    If watch Indian chefs, they cook off the spices, onion and garlic/ginger paste in oil and ghee first to infuse the cooking fats as it adds better flavour to rest of the ingredients.

    This has become my go-to recipe for all my friends and family with food allergies. I have several gluten-free people, as well as dairy-free and sugar-free. This satisfies everyone and tastes amazing. Great job Nikki!

    I’m originally Bangladeshi and we never use chopped tomatoes for our curry’s. We just use spices such as bay leaves, cinnamon, cardamoms, cumin, cloves, peppercorns, chilli powder, turmeric, coriander, garam masala and some yogurt. Our curry’s are always spicy.

    I normally cook traditional Indian curries and I was a little sceptical about this one, but it turned out absolutely amazing! Great flavour and perfectly balanced! I cooked it a little longer and added Garam Masala instead of Cinnamon. It had the perfect consistency, too, didn't add any cornflour. Thank so much!

    I am indian nikki - one suggestion , for making any curry dish - simmer it when you put spices and tamatoe untill it releases oil - this means your masala paste/ gravy is cooked .. love all your dishes
