      If I want to use my Instant Pot, I’ll follow the seps in sautéed mode for the onions, then add the paste and coconut milk, sautéed further then dump in the rest of ingredients and put it on high for 8 minutes, natural release? Thanks 🙏🏼

    Recipe: (Hope I got it all…)
    1 lg shallot, sliced into strips
    1 lb yellow potatoes, quartered
    3 Tbsp yellow curry paste (Roy D (?)
    1 can Coconut milk (~2 Tbsp, then the rest of the can)
    1 lb chicken, cut into 1.5 inch pieces
    1 lb potatoes (yellow?), quartered
    1 cup chicken broth (+/-)
    2 Tbsp fish sauce
    1 Tbsp sugar
    Thai basil leaves, 6-8 leaves, chiffonade (thinly sliced)
    Rice
    4 quart pot, medium heat, Tbsp oil, add shallots. Cook 2-3 minutes to soften.
    Add curry paste, then ~ 2+ Tbsp coconut milk. Stir.
    Add chicken, cook roughly 3 minutes.
    Add potatoes and remaining coconut milk, plus 1 cup chicken both.
    Bring to simmer / reduce heat to medium-low.
    Cook 15 minutes or until potatoes are tender.
    Add sugar & fish sauce
    Serve on rice if desired, sprinkle basil in each bowl

    I find your recipe much easier and quicker. Instead of chicken I am going to do mine as a vegan curry where I am substituting with tofu and veggies. Vegan stock instead of chicken stock. Cilantro is a must with a bit of Thai basil. Most of all, thank you for sharing this quick curry recipe. There are vegan fish sauce from my local Asian store, so I will definitely try it with that brand. With this recipe I was able to master the taste just like the restaurant. 맛있어요.

    I lived in Cambodia where we have the very same curries as Thai curries usually less chili. Our curries were served with bean sprout, raw long bean, and peanut as topping along with basil served on rice or a rice noodle or eaten with a french baguette (due to French colonization). Yum I'm going to make this soon.

    Love those pastes Flo!! I use them for Thai and Indian curries. And you are right, they work anywhere. I will even use them in my slow cooker for church potlucks and socials. Everyone loves a good curry and rice!

    My favorite curry. I use the same brand of paste, reminds me of Indian curry especially with the potatoes and the turmeric is good good for you. I typically also sauté ginger, garlic with the onion.

    Yes, yes, yes! When the months get colder, I cannot get enough curry. Caribbean, Thai, Malaysian, Indian, or Vietnamese. A bowl of this beautiful creation is the best! Especially when you live in northern Canada!

    Years ago, my old bosses took me to a Thai restaurant for lunch. The place was a little run down and dainty and we automatically started to regret our decision. Although, the staff was really nice so we decided what the heck and stayed. I am SO glad we did because I ordered their yellow curry (I had never had Thai curry) and it was the MOST DELICIOUS curry I had EVER had. I cannot wait to try making it for myself.

    I could only find jars of premade yellow curry sauce at my grocery stores, no paste, but I’m going to add coconut milk to thin it out and cook the vegetables and chicken in it. Hopefully it works!

      if you prefer it thicker, use less chicken broth like she said, her husband likes it with a lot of sauce over rice and so do I!

    Looks delicious! Your beautiful garden gives me hope that a brown thumb like me think that I could have one too. I have put extra Thai basil from the Asian market in water and it roots really well, then transfer it to a pot.
