I was disappointed that this wasn’t in the carnivore book I recently purchased, but this morning I saw a short of Ken berry and his wife raving over this lasagne and calling you a genius so I’m glad I found it!
I think the one they made was a different one Maria makes! This one sounds delicious, but I want to find the other one, too!!

I usually mix an egg with ricotta cheese so when it bakes it gets more firm 😀

I do the same and I will even cut up hard boiled eggs and layer them in a lasagna. It's actually quite authentic to do that too. For meat I use ground beef 30/70 fat ratio. Sauce I use heavy whipping cream, egg yolks, freshly grated parm and freshly grated mozz with a touch of salt. For additional meatas I have a meat slicer and will smoke something low and slow and cool that overnight in the fridge then slice that thin on the meat slicer.

If you brown the meat long enough, the fat soaks back up into the meat and you get nice brown bits which give the meat some extra flavor.
Yes but it will also cook the meat so much that you’ve destroyed a lot of nutrient quality of the meat + created carcinogens. But if it just the taste you care about then sure thing

@@Truckngirl yes, cooking meats at high temperature especially to the point of heavily browning/charring creates carcinogens. Best is too limit this as much as possible like when cooking at home vs when going out to eat.

I made a carnivore lasagna using Egglife wraps as the noodle layer and it was phenomenal. When baked you couldn't really tell it was eggs in it at all.

I was just going to ask this question ;-) I’m just starting carnivore and was curious if I could use Egglife wrappers. My nephew is severely allergic to chicken and will often have a meal at our house. Thank you for posting this 😁

Always put a sheet pan underneath your bubbling boiling pyrex casserole baking dished incase they crack or shatter or boil over.
Good tip. A lot of pre-shredded cheese has cellulose. I keep a block in the freezer and shred as needed.
I shred my own cheese also because of that.
Plus a block is cheaper!
Instead of sliced deli meat I use EggLife egg wraps in place of noodles.😊

I've made this lasagna twice since originally seeing this on REVERSED.
I USED GROUND BEEF AND THIN SLICED TURKEY, THEN GROUND RIB MEAT AND GROUND STEAK.
IT WAS EXCELLENT!!

I'd use ricotta,and I make egg crepes( no flour of any kind) so I'd use them instead of the chicken.
I have been checking out carnivore for a number of weeks now, watching lots of videos, etc. Getting my mind ready to do this. I ate way toooooo many carbs, so I'm hoping this won't be too much of a challenge. I have IBS, had a complete hysterectomy years ago had endometriosis, not on hormones replacement, and had my gallbladder removed a couple of years ago. You mention about getting some support with these issues, so that is what I am looking for, assistance. I decided my goal is 74 by 74 (I am working to be down 74 lbs. by my 74th birthday in September 2024. 6 1/2 months from now. I started today, cleaning out my fridge, and getting some meat tomorrow. I have never been a big meat eater, and some days when I go grocery shopping I can't even stand looking at the meat, it almost makes me sick looking at it - so that is another huge challenge to start. My health is more important. I am relatively healthy, other than the other issues I mentioned. Recently have had health scare - colonoscopies - 2 this year polyps removed, clean bill of health after 2nd one. Got me thinking about my health, so here I go. I started today with bacon and eggs today without toast. Wasn't as much of a struggle as I thought. Case of mind over matter. If I don't mind, it won't matter. Thanks for reading this and hopefully being able to giving me some assistance.

I agreed, I had insulin resistance, neuropathy, IBS-C, macula degeneration, hypothyroidism, and osteoarthritis. I turned them all by changing my lifestyle by having a clean diet. I live in Maui as well.
Btw, the butter can’t be heating up more than 350F. Only Ghee, avocado, or coconut oil.😊

Brown the beef more. I think you sopped up water. I think beef takes on a richer flavour when deeply browned.
That dog looked so happy and healthy, thank you so much for giving that dog such a good home and good food. So nice to see such happy dogs. My dogs sit next to me eating off my plate. Nice ny strip, they love that. Us carnavors know how to feed our dogs too. My 3 pups stole a 2 pound steak out of the bag and ate it raw. Sure glad to afford local beef and pork and sure the dogs like it too. Soon my cow be ready and oh boy he be good.
Leftovers make the chore of cooking easier. I make a lot of something that can be frozen and freeze the rest for another time. Its no different than buying frozen foods. Then you can add some fresh sides or condiments or whatever. Its easy to complain about leftovers when you’re not making the meals. 🤭

As a classically trained chef, I can tell you that black butter is delicious...you just haven't had it done right!! If you use a lower heat, brown butter should take time, and black butter takes longer! Black butter is not "burned". If it's burned it wasn't done properly!

OMG, I made this with ricotta because I don't like cottage cheese in lasagne and it is SO GOOD. My cheese sauce was messed up but it still worked. Yummy. Thank you so much!

This reminds me more of a Greek pastiche with a béchamel sauce! You can make this with many flavor profiles, Mexican, Greek etc.

I would suggest that you take 1/4 1/3 cup of shredded cheese and stir it every minute at a time tell to the texture is pure smooth and not lumpy spongy.

I was scrolling and saw your video and I love this!! I saved the video and subscribed to your channel. I suffer from acid reflux and have been watching the keto and carnivore diets on youtube today. I had eggs and sausage with cheese in a low-carb tortilla and then I cooked filet mignon with butter and a small amt of onion for lunch. I couldn't eat it all so I saved the rest for dinner and had a steak taco (low-carb tortilla) w/green salsa and feta cheese. I am just starting this and I honestly can say that I had no desire today to snack. Thanks for sharing your recipe. I am going to try it soon!🥰

I always get rid of the rendered fat from ground beef because it causes instant explosive "problems"

I made brown butter for the first time this week. I think I had the heat too low. It was also super salty, so I added a small amount of organic Stevia. I did add crumbled bacon as well. They were better after being in the fridge 2 days. I used a silicon ice tray.
Try making it with unsalted butter. Makes a big difference :)
That's really amazing. I went on a high carb diet a couple years ago and kept with it. I was pushing 900 pounds at the time. After two hears on high carb I'm down to 170 now and run about 10K per day. I started doing the diet on an "intermittent fasting" program but found that was not helpful, so just went to continuous and that worked out fine. In addition to the weight loss, my A1c went down from over 10 to 4.8 and my CAC score went from 900 to 20 - so I'm doing pretty good.

I made Keto noodles to layer in there
Some things I did a little differently.
I did a container of ricotta cheese and about 1/2 cup of cottage with one egg
I seasoned the ground beef with salt, , pepper and some Worcestershire sauce (I actually used angus stew meat that I grinded into ground meat) then I also added fried buttered mushrooms on top and fresh mozzarella cheese. 🤤
It taste even better the second day! We are eating this again tomorrow! Husband says it’s the best recipes he’s had yet besides the carnivore mash potatoes.
That cheese sauce tho I could put that on everything ! It is Devine 😅

@@underated17 I eat beef, bison, deer, elk, lamb and some turkey. Liver and heart. Sometimes grasses beef hot dog . eggs and butter
@@vikingmountainranchlife7447 All grass-fed/finished or no? Most of that is grass fed huh? Wish I could afford to do all grass-fed/finished? But many say they don't like the taste of grass-fed/finished meat or game. I know I love deer and bison meat though haven't had in a long time.

I've been playing around with the Redmond's Smoked Salt. It's so good in my ground beef! I haven't tried Truffle Salt yet, but maybe I'll get some and try it. The lasagna looks delicious! :)

Yeah I already got inspired to order the red salt and I am going to look for the truffles but I hate the way CZcams now covers up all the "more" information and just put the links over the written part below them. I mean why does CZcams think that a person writes all that so that they can just be covering it up? 😜 AND none of these links go to Amazon anyway, so I'm stuck with just ordering on my own. I would prefer giving her the credit but she's not on Amazon . And I don't feel like starting up with a whole other company right now.
But I'm fascinated by carnivore and I've been getting more into making lasagna lately only I haven't been happy with the results "satisfaction -wise". (If that makes sense) THIS looks delicious.
