【氣炸鍋】脆皮炸子雞 [AirFryer] Crispy Roasted Chicken
材料Ingredients:
雞 1隻 Chicken 1pc
紹興酒 1湯匙 Chinese wine 1tbsp
薑 3片 Sliced ginger 3pcs
醃料Marinade:
五香粉 2茶匙 Chinese five spices powder 2tsp
白胡椒粉 2茶匙White pepper powder 2tsp
鹽 2茶匙 Salt 2tsp
白糖 2茶匙 Sugar 2tsp
上皮水Coating:
麥芽糖 1湯匙 Maltose 1tbsp
紹興酒 1湯匙 Chinese wine 1tbsp
大紅浙醋 1湯匙 Red vinegar 1tbsp
鹽 1茶匙 Salt 1tsp

i hv been thinking about putting a can of beer, holes poked at the side of the beer can, stuff into the chicken with holes facing up and air fry it. i have seen people doing it with oven with the chicken standing. not sure how it will turn out

你的雞太約幾重,我想知道好凖備醃料是否要調整。每次搽完上皮水要等待幾耐才能搽另一次。可以用風扇吹嗎,搽完上皮水之後一定要等三個小時才可以焗,對嗎?
醃料不用調整,你只需要買到剛好能放進你的氣炸鍋的雞就可以,除非你用半隻雞,就醃料減半吧,我這份量的醃量是淡口味。上皮水可以用風扇吹到乾,看到有一層糖衣就可以抹多一次,等三小時是確保雞皮乾透,才會炸出脆皮,你覺得夠乾也可以直接氣炸

Thanks for sharing, in olden days, my late mom taught us to use salt to rub the whole chicken's skin, rub away all the dirt then wash well. Must do this step as chicken never take a bath, so any smelly dirt will be removed but nowadays young people like you never wash the chicken well and it stink if it is mountain chicken. Years ago we often flew to Paris with Thai Airways, I ordered a Mountain chicken for lunch, I just couldn't eat 1 mouth as the chicken stink, the Air Hostess was shocked why I didn't eat it ,

醋的揮發性可以帶走水份,有麥芽糖所以不會酸的

氣炸鍋的原理跟對流式焗爐一樣,但因空間較小所以傳熱更快(烤焗時間更短),所以用哪台機器其實取決於食材的大小
