How to make Cheese "Ravioli" TÚRÓS DERELYE

    INGREDIENTS:
    2 pounds (0.9 kg) of yellow-fleshed potatoes, 2 eggs, 1 pound (400-450 g) of flour, 2 ounces (60g) of room-temperature-butter, 1 heaping tablespoon of powdered sugar, 2 pinches of salt
    Filling: 1.3 pounds (600g) of farmer’s cheese, 1 egg, 4-5 tablespoons of powdered (confectioner’s) sugar, 1 packet of vanilla sugar, zest of a lemon.
    Mix all ingredients together.
    Coating: 3 cups of breadcrumbs, powdered sugar, 6 tablespoons of butter
    Boil and mash the potatoes. When the potatoes have cooled down, add the salt, the melted butter, eggs and stir it well. Gradually add the flour, powdered sugar and knead it into a dough. Transfer the dough to a floured surface and knead it for one more minute and roll out with a rolling pin, about ¼-ich (5 mm) thick. Cut the dough into 2.5x2.5-ich (6x6 cm) rectangles and place a heaping teaspoon of cheese mixture into the middle of each square. Fold over the opposite corners and seal the edges by pressing with your fingers.
    Meanwhile, toast breadcrumbs in a frying pan in butter for 2-4 minutes. Stir continuously. Toast them until they turn into a golden brown color.
    Bring a large pot of slightly salted water to a gentle boil and carefully add the dumplings. You may want to cook them in two batches. To prevent sticking, stir the dumplings gently during the first two minutes. Cook on a medium heat, uncovered, for 6-8 minutes.
    Roll your cooked but still hot dumplings in the warm breadcrumbs, and set aside. Serve with powdered sugar. Serve the derelye with sour cream mixed with icing sugar.

    Túrós Derelye
    Hozzávalók: 0.9 kg főtt áttört burgonya, 2 tojás, 40-45 dkg liszt, 6 dkg vaj, 1 evőkanál porcukor, 2 csipet só
    Töltelék: 60 dkg túró, 1 tojás, 5-6 evőkanál porcukor, 1 cs vaníliás cukor, 1 citrom reszelt héja
    30-40 dkg zsemlemorzsa, 6 dkg vaj a forgatáshoz.
    Keverjük össze a kihűlt áttört burgonyát a sóval, olvasztott vajjal, tojással, porcukorral majd folyamatosan keverjük hozzá a lisztet.
    Gyúrjuk össze egy gombóccá, majd lisztes felületen gyúrjuk még egy percig.
    Keverjük össze a túró töltelék hozzávalóit.
    Sodorjuk ki a tésztát 0.5 cm vastagra es vágjunk ki 6-8 cm-es négyszögeket.
    Helyezzünk egy púpozott teáskanálnyi tölteléket a tészta közepére, majd hajtsuk félbe és csípjük össze a sarkokat.
    Sós vízben főzzük 5-6 percig, majd vajon pirított zsemlemorzsába forgassuk bele. Cukros tejföllel táláljuk.
