I am a former tech worker who lived in NYC for 30 years. When I reached 50, I set out my own and created a business selling on Amazon using their FBA program. Great fun, but neither career left much time for healthy living.
I turned 60 last year (2023). I found myself 110 pounds overweight and seriously out-of-shape, pre-diabetic, with sky-high cholesterol, and unable to walk for more than 20 minutes without resting.
I decided to make some major changes. I shut down my Amazon business and started living frugally. Health is more important than money, especially as we grow older. In August 2023 I started the carnivore diet and lost 65 pounds in 3 months.
Now I’m hooked! I can walk for miles without a rest now. My cholesterol is within normal levels as is my blood pressure. I am no longer pre-diabetic, and I feel 30 years younger!
After experiencing the benefits, I’ve become passionate about sharing my story to help others.

Getting fattier ground beef will sustain you longer, is tastier, and cheaper.
Pork belly is amazing!!!! I cut it in little tiny cubes and air fry at 400 until crispy.
NY and Ribeye Roasts are super easy to cut into steaks. Filet is a bit harder.
Invest in a vacuum sealer.

Hey Jay, thanks for sharing. Those vac-packed (what we call sirloin in NZ) loins are easily cut into individual thick steaks and either vac seal and freeze in single or double steaks (if you want to share!). All the best on this journey! K

The Vacuum sealed packs are a couple of things depending on what you get. At Costco they usually sell the Strip Loin... that is great to cut your own NY Strips - SUPER EASY. The Rib Loin at Costco is usually already de-boned and you can cut Rib-eye steaks OR Rib roast (same cut) to make Prime Rib, and expensive Tenderloin is what the Filet steak is cut from. I have a video on my channel on how to cut your own filets and will be posting more soon on how to cut NY strip and Rib eyes - but you will be amazed how easy and you can cut them to the thickness you prefer.

I'm going to have check out the pork belly. I haven't noticed it in my Costco. I get Costco's canned salmon and make salmon patties. I use salmon or tuna mixed with an egg and panko (pork rind) crumbs to make the patties fried in butter or bacon grease.

We always buy the whole strip loin and slice ourselves. It's very easy and usually a better price!
That’s my favourite part of carnivore. Simplicity. Cook meat, add salt and eat. 😊

I just used one of his videos to cut up ribeyes. $165.19 for 14.23 pounds. I made fourteen 3/4 inch steaks & 3.5lb rib roast.

Maybe consider getting a cheap slow cooker. You can cook cheaper cuts of meat and have them come out fall apart tender. Best part, you cut it into large chunks , put it in the pot with some water or bone broth, turn on the pot and leave it unattended for 6 hours+ and it’s done with leftovers for later! Intensify the flavor by surface browning in butter or tallow in a pan first, but not necessary.

Hey Jay. That Aldi salmon is not comparable to the costco one. You needed the sockeye and it was just pink salmon at Aldi but they do carry sockeye at some stores.

All I ever buy anymore is the whole boneless rib roast & whole strip loins. Super easy to cut, you get trimmings to use for making beef tallow, & it is cheaper per pound.
Hi ! Just stumbled on your channel. I am also carnivore. I buy the big striploin in the vacuum package and cut in into one inch steaks. I put them in individual sous vide bags and freeze them. Makes such good steaks and is my all-around go-to easiest meal ever (cooked in pan with butter, 2 minutes on each side). Go ahead and try !!!

Eggs normally $1 or less.

Last week I bought and smoked a New York loin roast from Costco. Smoked it for a few hours and removed at 130 degrees and let it rest. I filled two large 11x9 Tupperware with steaks I cut from it. I left them a little medium rare so when I heat them up to eat. They are great. I would estimate I got about 18 steaks from one large roast. Most of them I vacuum sealed and froze them. My wife and I had two of the steaks and they were tender and well flavored. I am going to buy another this weekend if they are still on sale and build up my steak supply.

Yes, seems expensive to us, but I know it costs more elsewhere.
I usually get the Pork Loin, and Ribeye Roast and cut at home. Vacuum seal, cutting board, and Victorinox 10" breaking knife are all I use. When the price goes up, I make the cuts thinner.

Nice grocery haul Jay! I never thought to video mine, probably because I don’t buy much. I was so upset when I looked at the Costco rotisserie chicken ingredients, and it has carrageenan. Also, Costco stopped selling sugar-free bacon. I will try the pork belly.
I like the pork belly so much better than the bacon! Yeah, too bad about those rotisserie chickens, they were such a good deal….
Hubs is going to Costco Tuesday and I've put him on a mission for pork belly. I don't think I've ever had it, not sure our Costco even has it. The salmon I bought at Costco from your recommendation a few weeks ago is delicious. Good to know about the Aldi salmon.

Cutting a strip loin into steaks is super easy. All you need is a sharp knife, cutting board and some quart ziplock freezer bags. I cut my last one 1 1/4" thick and the steaks averaged 12 ounces. I might go 1 1/2" next time. One inch is too thin, IMO, because one steak is not enough food for a lot us carnivores and two of them can be too much, although you could have the leftovers with eggs. 🤤

@@aznick102 Give it a whirl. Cutting your own steaks or chops from a pork loin is the way to go. Currently at my local Sam's pork loin chops are $2.78/lb. A whole pork loin is $1.98/lb. I can cut an 8-10 lb loin in 5 minutes. Great way to save money and you get them the thickness you want. I usually cut a few thin ones for breakfast, a bunch of thicker ones for the grill and leave a nice chunk to throw in the crock pot.

I often carve whole loins from Costco, beef/pork, into chops and steaks. Wife vacuum seals them while I slice. Before you know it, the packages are labeled and in the chest freezer. It's the most economical way for us.
My Costco rarely puts them out so I knock on the window or open the butcher door and politely ask for a whole New York and they bring one out from the back.
I've bought whole NY strip and whole ribeye in the the cryovac packaging. 12 to 17 steaks in each depending on how thick I cut the steaks. Price per pound, in Michigan, from 8.98 to 16 depending on the cut. Only way to go for me, it's seems to always be cheaper to cut them myself. If you decide to cut your own I recommend Amaz for the good long butchers knife to make it easier.

125 a week per person is still too expensive. While rib-eye may be the best of the "normal" steaks, it's also the most expensive. Simple yes, budget friendly? Not quite.
Living in the New York City metro area, $125 for groceries is pretty good.

Wow, prices in your area are really high. I spend about 5 dollars a pound for ribeye, at a little market called Sparkle, about 45 minutes from our house. I get 10 lbs of ground beef for 20.00. Meat shopping for our family of 5 costs about 150.00 bi-weekly. (western Pa area) I hope those prices come down soon! Sending good health vibes ♥🥩

Near impossible…to find any beef, that’s not ground hamburger for $5 a pound! I do buy a lot of chuck roast, on sale at $4.99 a pound….cook it like steak! Yum
@@nancykowalczyk2070, I'm in the Ohio Valley and we have a market called Sparkle that have insanely low meat prices. I feel bad for anyone having to pay those prices.
Wish I could buy In bulk like this and freeze but whenever I have meat that's been frozen, I get tummy ache and feel really weighed down and fatigued. So I'm using Dr Chaffee's Dry brining method in the refrigerator. Last up to 2 weeks.

I like the Gerolsteiner mineral water. Those steak loin you can buy and cut them about 1 inch thick and put them in wax paper and keep them in the freezer. I did that with the bone in rib eye when it was on sale. I agree pork belly is better than bacon.

@@Jaylwoodworth I bought about 20 pounds of bone in rib eye when it was on sale and carved out the bones. I slow-cooked the bones with a little meat on them in the slow cooker. I cut those rib eye steaks about 1 inch thick and wrapped them in wax paper and are in the freezer. Have you cooked any pork butt? I like to cook a good-sized one ~ 7-10 lbs . My kids really enjoy it. Lamb is great to have too when it's on sale. Slow cooked chuck roast are wonderful. I get that for ~ $4.99 at Market Basket when its on sale. I am on the MA/NH border not too far from you and go over to the butcher market in NH.
I forget what I paid for the chuck roast, it it was more than what you paid. I think $6.99 / lb. I’ll bet things are cheaper in New Hampshire in general.

I cut them up into strips, like thick bacon. You need a very sharp knife to do so.
I don't care for the pork belly at all. Prefer the bacon.

I slice it and fry it like bacon. I’ll try to post a video of me cooking it soon.
I also eat pork belly for the same exact reasons plus, I don't like bacon, I prefer pancetta (Italian viewer here). Steaks here are much more expensive, thou.

Hi Jay... well I have never had pork belly yet, but I will buy some next time I get to Costco. I have a lamb roast slow-cooking in the oven right now... it should last me a few days. I haven't been able to get to a Costco for a couple of months now, so my freezers are nearly bare now. I may have to go on a fast as I ran out of food money for the next month... I think I will look into the Kirkland cat food and see how much actual meat is in it... I wish my kitty would eat bits of beef or chicken or pork as he used to... He was so healthy and then after a surgery inside his mouth (15 stitches) I had to feed him canned cat food for a while and he got addicted to it so he would not eat fresh beef anymore... I used to share my steak with him... I have to get him back on real food...
My cat is 16, and isn’t eating dry food anymore. I think it bothers his teeth. I’m not sure how much meat is in the Costco cat food, will take a look when I get home. Hopefully there are some food banks near you. It’s not easy living on a fixed income. There’s no shame in asking for help.
Oh my! I would never go to a food bank Jay, I am no stranger to fasting, but I have lots of food here that is not Carnivore food, so if I wanted to eat other foods I could do that. I have been wanting to start a fast for ages, I keep procrastinating as it's hard to get started. the first four days are really hard, after that for next 20 days or more is easy.

Ah, ok, now I understand. I’m glad you have plenty of food around, and in that case a fast is a good thing. I’ve been thinking about fasting for one or two days this weekend myself. I’ve never done one for 28 days; maybe when I get back from India I’ll try for a week.

It’s funny how things work in Europe. When I was there this past Spring, Vienna and Prague seemed cheap, yet just a hundred miles away, Germany seemed expensive. Amsterdam was even more expensive. That was before I started carnivore, and I ate lots of bread and cheese to save money…...
@@Jaylwoodworth yes, it's crazy weird. I could be crying about your prices for lamb. At my butcher it's about 20€/Dollar per pound, on sale. The regular price is unaffordable for me, I'm doing carnivore on a budget as a part time working nurse. I've found a local rancher for beef but only a few cuts are affordable for me. Half of the time I'm eating pork from my supermarket. Don't get me wrong, I love pork. But if I could afford it I'd be eating mainly various cuts of beef.
Cut your own steaks , I can usually get 13-15 steaks per save money
Strip loin is easy prep. That said it is a tougher cut of meat. I have found that if they are cooked Sous vide for 4-8 hours at 131 degrees and finished on the grill, pan or broiler they are very tender and juicy.
Get a big brisket, divide in 3-4 large sections and freeze separately. These do well in a crockpot as well and the portion ratio is very good for a very fatty/tender piece of meat. Great channel!

I'm on lion so no swine for me my local supermarket has 80/20 for 1.89 per pound three day sale I just go in a few times every time I go down if they have three registers going I go through each one once to stock up!
That’s a great price! We have a Walmart in the area that marks meat down to half price when it’s nearing expiration. That may be my next shopping video.
@@Jaylwoodworth ya Wallyworld don't go that far down here in PA depending on what cut of meat it is if it's ribeye you might get 1$ off a pound I have never seen half off have a blessed night and eat a little meat!
Wow, so according to this budget, you spend $500 a month for 1 person on a carnivore lifestyle. Maybe swapping out some red meat for chicken and salmon with canned sardines would bring your budget down a bit.
Those are good cost-saving ideas.

Perhaps put your cat on carnivore. A lot of the dog and cat food is processed junk.
