Had mine over 3 years. Just re opened it again.
Heavy char on the front taste. Lingering finish with marshmallows, circus peanuts, confectionery sugar.
Aroma is very earthy, still has dark cherry on the nose.
The aromas have changed since opening it. I'm not a fan of the aroma with it anymore , but the taste buds do not disappoint after at least a few minutes or more. The taste is only reason I would grab another if I saw it under 40. I think I paid 30 ish about 3 years ago.
    Great review, Thank you.
I found a few notes that you mentioned now that I listened and re tasted it again.

Bought some Ginja Cask direct from Woodinville Distillery last week. Liked it way more than the rye and regular cask strength which is also very nice. Definitely the perfect barrel to finish Bourbon IMO.

72/22/6 mashbill, pot still, sweet mash, 5-years-old, heavy toast, then char 4, grains grown in Quincy, WA (other side of the mountains) distilled and barrelled near Seattle then shipped back to Quincy for aging then shipped back to Woodinville for bottling. Knowing is half the battle!

There is a reason I have over 20 bottles, mostly special releases, from Woodinville whiskey. I have one bottle of their new 10yr anniversary BiB bourbon I'll be reviewing soon.
The owners, Brett and Orlin are two of the nicest guys you would ever meet. The hired the late Dave Pickerell when they started and he set them on the right path.

So I took a wine tasting class in college with an expert sommelier. One thing that I see over and over again is describing the nose as 'sweet.' We were told that you can never denote the nose as sweet because you can't smell sugar in water. We were told to dissolve sugar in water to convince ourselves that this was the case. Is 'sweet' excepted with whiskeys?

    • @mybourbonjourney

My first thought is not much of a comparison because of the different mashbills, the Old Elk is a very high Malted Barley and the Woodinville is not. That alone will cause the flavor profile to be very different. Hope that helps some.

I’m obviously in the minority but this Bourbon was a total disappointment. I’m a barrel proof/ cask strength guy but want to try lower proof offerings. I really like Last Republic Cask Strength, Jack Daniels Barrel Select Barrel Proof, Taconic Barrel Strength, etc.. My first and second sip of the Woodenville gave me a horrible taste profile, not what I was expecting. After my third sip, I said NOPE! Poured the rest of the bottle down the sink. I’ve only done that to 3 other bourbons, I honestly thought it was that bad….
