This was our first time making maple walnut brittle and it was a hit! It tasted kind of like like Cracker Jack's, it smelled like breakfast when we were making it and in my opinion it needs more maple for next time! But I guess that just means we just have to practice more, right!? You guys don't mind us practicing making this more do you? đ

đ About Hercules Candy
Hercules Candy has been on Steveâs side of the family since 1910(ish). When he took over in the 70âs, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesnât love being on camera and is very elusive) is their oldest daughter. Terri, youâve been trying the wrong kind of maple syrup. The maple syrup commonly found in stores is more often a mass produced product that is put through evaporators. The highest quality is actually from a producer that evaporates and cooks over a traditional open flame. It produces the deepest and darkest colour and is intensely maple flavoured. I purchase from a friends farm in Ontario, and it is about as dark as the flavour poured into this brittle.

My mom use to eat a candy that was MAPLE, PEANUTBUTTER CREAMS.. The outside of it was the maple inside was peanut butter. It was like a cream only no chocolate but chocolate sounds great

Did anyone els notice that the first pot of water she dumped in the kettle was the same pot of water he was dipping his hands in to scoop the corn syrup. Not that it really matters after a few hundred degrees but just wanted to point it out đ

What about using maple sugar to replace some of the regular sugar to amp up the maple flavor? Could also add a little vanilla too.

The stuff you Hercules Candy people do is very satisfying.
I think putting that couple tbsp. of baking powder in prematurely, and then heating it again, before the rest of it with flavoring, would definitely affect the particular texture, as well as the shape of whole nuts mixed, and mixed, and mixed on the table, may have acted like little wisks, adding even moar air to the body brittle. Nicely experimented!

We used ship station at one of my jobs, since it is through the post office, we had a mail truck come and pick up our packages. They were easy to track and it worked for international shipping also. We also had a rep we could contact from the post office she was wonderful. I kept her contact info when I left so if I had issues with personal shipping she helped me on that also..

Steve is right (as always-he is the master) the maple being subtle will leave you wanting more, too much and you will want smaller amounts of brittle overall. You want sell more then keep it subtle.

I wonder if adding the little bit of baking soda, letting it sit, and then adding the rest had anything to do with the light and airy texture or the taste. Also, different walnuts from another supplier.
My mom and I used to make homemade peanut brittle we used raw red skin peanuts and made 2 kinda just peanuts and another batch we added coconut that was my favorite peanuts and coconut..

If you can only add a cup, why can't you get something that is more concentrated Maple Flavor. But a caramel corn taste will sell VERY well, people love that.

Substitute some of the sugar wiyh Maple sugar (get from a maple syrup producer) and you won't have to worry about too much liquid.

I used to live in CA, and have been to Solvang several times. It has a strong Dutch influence. It's a great place to visit and live. What if you used maple sugar in it?

Trader Joe's discontinued the maple candies last year. who knows if they'll bring them back BUT they're available lots of places in Vermont and directly from maple producers and they are much tastier than the commercial ones!

We have a ton of Black Walnuts trees that produce. Nothing sprayed on them. I fight the deer and squirrels for them.you can have as many as you all want
We grow the chandler variety of nuts here in Solvang. Black walnuts are a lot of work props to you for harvesting those.

Random question for whoever would like to discuss - why is maple seemingly marketed as a "fall flavor"? I used to help collect sap for a local sugar shanny when I was growing up and to me all of my seasonal associations with maple are for the early spring when all of the syrup is made.
Brown coloured, like the leaves that fall off in the fall (here in England we call it Autumn).

We absolutley could, and it would probably be great! But maple sugar is so expensive that we would have to charge so much more that no one would buy it haha

Not relevant to this video, but thanks for *all* of these super detailed videos. Making candy canes is one of those things my mom has always wanted to do. But the one time we tried (years ago, without a lot of information, no practice, a week before Christmas) it did not end well. And she was pretty crushed by that. She's finally ready to give it another shot, largely thanks to your videos, and I intend to practice in secret as added insurance lol. 2022 is the year my mom's candy cane dream comes true! (hopefully)
So is there any chance you could share what gloves you use for candy canes? I heard in one of the videos that they were lint-free cotton gloves, but I don't know if you guys have found those to be "the best" or if other materials are fine and it's down to personal preference...?

They do use those and prefer them. If the candy is cool enough they can leave a nice glossy finish as they rub their gloves over. It still protects from the heat a bit. And it sticks less to the gloves and product
