đ About Hercules Candy
Hercules Candy has been on Steveâs side of the family since 1910(ish). When he took over in the 70âs, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesnât love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Donât forget to subscribe and hit the đ for more videos!

Craig, your videos are hands down, the best. There is no comparison. They donât lack anything. Others do an okay job but you have a special something that brings out more in terms of the conversations, banter, humour, process knowledge, team spirit and everyoneâs personality. The Christmas holiday season is during the summer so fresh fruits is the theme for desserts
They aren't a thing here in the states either. Yet by the way business jam it down our throats you would think it was. Pumpkin spice stuff in July! What lunacy is this? Let's just be fatigued of fall smells and flavors, before fall even gets here in the States.

The chocolate curtain can be fixed (the way it shrinks in as it falls). A wire, like coat hangar, can be attached at the ends, from the top of the fall to down just above the conveyor, the chocolate will then maintain a laminar flow sheet from side to side without it pulling in towards the center.

My husband and I stopped in Friday afterwork and bought some pumpkin, maple, and vanilla creams and couldn't resist adding some salted caramel. Best creams we have ever, ever had. Especially the pumpkin spice creams and the salted caramels. Suffice it to say our supplies didn't last through the weekend!

It's funny to see how everyone does corn syrup. Steve soaks his hands to actually cool the down. Everyone else just does a quick dunk like the water instant cools there hands. Or maybe they don't understand the method like Steve does.

Not sure if you are beer guys but watching the taste test at the end reminds me of two beers from Southern Tier that should be available in stores right about now. You got the Pumpking and Warlock. Pumpking is the classic spice beer, and the Warlock is the Imperial version. Warlock is my jam and because of that I think I'd be on team Dark Chocolate with this one.

When scooping out the cream from the mixer how about getting a bowl 'cage' that could hook on the side of the mixer so that the candy maker doesn't have to bend as much. Also it could move along the sides of the mixer. This should be both more comfortable for the person doing the job but also much quicker.

Would it be possible to make these at home using a stand mixer on a low level to get it to the cream consistency? The closest recipe I've found online says that fondant sugar is needed to get it to that creamy consistency but you guys clearly use granulated sugar and it works well for you.
I don't see why not, but there's only one way to find out for sure!

The mold machine needs leveling . Check each corner height, interior gap at each corner.
the rod with the spring could be warped. As for the spring might need replaced warning get a professional they can be life threatening no joke.( garage door repair man or industrial maintenance)

"Fluidity" is a good word but I think "Viscosity" is a better one when talking about cream drops. For instance. Heat will lower the viscosity of the cream allowing it to flow easier. As they cool the viscosity will rise resulting in the candy setting and hold the shape of the molds.
If you turn on the cream machine will it move once the cream is made an If so why not turn it on when you need to get the cream an turn it off real fast why struggle

Would you ever consider making cotton candy in the front of the shop so when people come in, they see all these colored bags of cotton candy⊠like decorations at a party? in many different flavors and colors.đđ„°đ
You could even use your powder and Crystal scrap bag to grind your sugar back into powder and use it for the cotton candy machine ? It could be mystery flavors all mixed together they would taste great.đ
