About once a year when we're all caught up on everything we'll make mystery hard candy all day. We don't add any coloring because there will be 7 different flavors in this bag, but they all look exactly the same! This time around we did lime, orange, peach, cotton candy, cheese cake and pineapple.

đ About Hercules Candy
Hercules Candy has been on Steveâs side of the family since 1910(ish). When he took over in the 70âs, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesnât love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Donât forget to subscribe and hit the đ for more videos!

I'm so glad Greg has spoken about his favorite part. I love when other candy makers pick up the candy and let it drip and all that. I've always wondered why Steve doesn't do it, but I guess he's just a practical man haha.
If Steve wasn't taught how to do it by his family he usually doesn't do it đ

First, I love these videos and I can't even tell you why. It's hypnotizing to watch! I have one suggestion/question. Why do you use a tiny shot glass for the flavoring? It's awkward to hold with gloves - I'm waiting for someone to drop it in the molten candy... And the repetition, of 4 shots, 5 1/2 shots.... I recommend you use a nice graduated cylinder for measuring. You can get very accurate measures, it's easy to clean, etc. Sorry - the scientist in me and my OCD just cringe at the little shot glass. Keep up the great work!

I just Googled it....cream of tartar helps prevent the creation of sugar crystals (kinda important when making hard candy)
I use cream of tartar withegg white dishes like pavlova, it makes it more aerated and also whitens it :)

In some candy recipies cream of tartar is used to keep the liquid sugar from crystalizing.

Cream of tartar prevents crystallization of the sugar. So it makes the candy not be possibly grainy.

You should make orange cream ribbons, And/Or something else like cherry limeade, or blue raspberry lemonade, or strawberry banana. I guess what I'm tryna say is two flavors mixed. Flavors you don't typically make.

The one ingredient here that may concern you is cream of tartar. This ingredient is used as a binding agent to help ensure that everything sticks together to become a solid sheet of hard candy without having to rely on the use of corn syrup to get the job done
