Perfect Fried Rice

    The classic fried rice. Once you learn this, it will be part of your weekly menu!
    Fried Rice with Chicken
    3 Tbsp. Cooking Oil
    4-6 Garlic Cloves, coarsely chopped
    2-3 ea. Eggs, lightly beaten
    4 cups Day old rice, long grain or Jasmine
    ½ Tsp Salt
    1-2 Tbsp. Thin Soysauce
    1 Tbsp Oyster Sauce
    ½ Tbsp Sugar
    2 Tsp. White Pepper
    2 to 3 Green Onions, chopped
    Chicken & marinade
    Method:
    3-4 oz. Chicken, sliced for stir fry
    1 Tsp Cornstarch
    1 Tsp Baking Soda
    1 Tsp Vegetable Oil
    pinch salt
    Combine in a small bowl and reserve
    In a large skillet, heat oil until a whisp of white smoke appears. Add the eggs and lightly scramble until just set.
    Stir in the chicken and garlic cook for about 2 minutes, until chicken is almost cooked through.
    Fold in rice pressing down in small circles to separate rice grains. Add salt, thin soysauce, Oyster sauce, and sugar. Continue to fold for about a minute or two. Don't be afraid to scrape rice stuck to the bottom of the pan. Cook until rice absorbs the sauces and is slightly crisp on the edges..
    Fold in green onions and white pepper, cook for an additional minute. Serve immediately.

    DO NOT USE THE PRINTED RECIPE! 2 Tsp. of white pepper will absolutely ruin it! Taste before you season and season to taste. Trust me. That much white pepper will make it inedible. That must be a typo. Mr. Tila, can you confirm please?

    Adding the chicken later, by the time the chicken cooks, wouldn't the rice and egg be overcooked?

      Would only take three or so minutes.. also, I’m sure the chicken would be more overcooked if you added first

    @ChefJetTila. Great video but there’s no way I’ll get already cooked rice from a restaurant at all. I recently re-learned how to cook perfectly fluffy (1) brown rice (2) Carolina Plantation (fresh crop) Jasmine rice from Darlington SC and (3) perfectly fluffy Carolina GOLD rice using Chef Sean Brock’s prep and cooking method (it’s a short grain rice that’s carefully made to become fluffy instead of sticky). Many thanks for this video.

    How about a recipe for perfect fried rice that doesn't start with a shopping trip to an Asian restaurant?

      cook rice yourself with half a tablespoon less of water. Spread the rice over a pan and put it in the fridge for an hour or so until it dries out a bit. Alternatively, use leftover rice that was stored in the fridge from last night.

      ***** Deeeeeeeeee-licious! Best fried rice I've ever tried to make. That egg trick totally works. I added some veg instead of the chicken and served it with sweet and sour pork. My dad, who is a very fussy eater, absolutely loved it.

    Hmm why are asian fried rice cooked differently. Sone cook egg 1st or chicken seperately. Does it really matter what goes in 1st?

    Gee... I thought Jet knows what he is doing. I guess NOT.
    This is so wrong!!! You don't mix uncooked chicken with cooked rice and egg. Always cook the chicken first with oil and garlic in a hot wok. and then set aside.
