+Alex Smith I'm not sure what he used but generally you should use sweet for this dish.

This is the recipe's foundation and hold the common ingredients every Veal Marsala recipe uses. Onion, garlic, salt, pepper, rosemary, thyme and other spices can all be added to this recipe ascan Chicken stock. It all about what flavors you like and add to enhance this dish to your particular taste.
Cut up and serve with fettuccine. My favorite.

Thanks! Yes, there so many variations of Marsala recipes and even I like to use garlic but this is the basics as far as ingredients go in a Marsala recipe..

Instead of adding stock to the recipe, he overloaded it with olive oil and wine.

It does look like veal stew, doesn't it? Too much wine. Where is the garlic? Where is the veal stock? This recipe does not seem right.

Adding garlic, salt pepper rosemary and thyme and other ingredients is completely acceptable and I would even encourage adapting this recipe to an individual's taste. This is the original recipe from Marsala born many years ago but even in Sicily it has evolved into many different styles. Please let me know if you have an interesting recipe to share.

Many people use garlic and it's perfectly fine to use it in this recipe but the recipe that originated in the city of Marsala Sicily does not call for garlic. Recipes evolve, and there are now so many wonderful chicken and veal Marsala recipes that use so many diverse ingredients.

Question: his mis en place of salt & pepper- was that for decoration? Never got used.
The Marsala... never burned off the alcohol prior to adding the meat back in.
So, no seasoned meat, no seasoned flour, had to leave the veal in the pan in an EXCESSIVE amount of time so that alcohol burned off so it would be over cooked. Is this his first video?
I'm looking at different video's and have only seen one that burned off the alcohol. I would think that you would, but again...I've only seen one burn off the alcohol.
your not a very good chef ..the pan was not hot enough and you overloading it is not a good technique as it would make it colder.
