  • CHICKEN MARSALA:
    1 ½ lb. Chicken Breast (Chicken Tenders)
    1 cup Flour + 1 tsp Salt + ½ tsp Black Pepper
    Olive Oil
    2 Tbsp Butter
    1 clove Garlic, halved
    1 lb. Baby Bella Mushrooms (Cremini)
    ½ cup Shallots, chopped
    4 cloves Garlic, minced
    1 cup Marsala Wine, sweet
    2 cups Chicken Broth
    1 Tbsp Butter mixed with 1 Tbsp Flour
    Fresh Parsley, chopped
    Salt & Black Pepper to taste

    Who is this lady?
    Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
    Where does Gina get her recipes?
    Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
    Why is no one helping her in the video?
    Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
    Why don’t we buy her a new...?
    Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
    Who is behind the camera and behind the scenes?
    Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
    Does Gina read the comments?
    We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    I have officially stopped watching the food network channel about 3 years ago. The cable companies haven't got a clue about the viewing public, they think all people want to do is watch, big Hollywood productions and not real people?       Sounds like my grandma. She born and raised in Oregon. She was a homemaker from the time she was a kid. She made her own clothes and when she grew up she made clothes for her children and grandchildren. She cooked for us with love. You would show up unannounced at anytime and she was like what can I make for you. You want a roast. She loved who she was and we all loved her. Miss her so much. You can just feel grandma Gina,s love for her family

    My Mom recently passed away and we used to watch you all the time. She loved watching you and we compared recipes on the weekends when could both have time to sit together and relax.     I just love, love, love your cooking, my mother-in-law was from Palermo
    Sicily, she was a great cook too, I’m Hispanic she learn to cook some Mexican dishes and I learn how to cook some of her dishes, I could understand some Italian because some of language sounds like Spanish to me, my favorite thing I like to cook was the spaghetti sauce, my mother-in-law would in a piece of whatever type of meat in the spaghetti sauce and let it slowly cook, I remember that she made her own pasta and lay it out on the table and my daughter would love to eat the dry pasta she was only two at the time, my mother-in-law passed away and my daughter passed away too she was only 36 years old, you just bring back beautiful memories❤️❤️❤️

      Yes. Would love this cookbook too! There is a woman on Facebook. And while she was having chemo she would cook for others going through chemo too. She started sharing her recipes and put them on Facebook. That took off and she used to pay her medical bills. Got more and more followers. (She cooks american.) She had to start cookbook and after more requests she is on her 5th or 6th cookbook!! Her name is Janet. BUT..i know how to cook that. But for Authentic italian cooking...you cant even find that on a cooking show...which i gave up on years ago. Yay Gina!

      Hello Michele,
      The technique that Nona Gina used is a French technique called a Beurre manié, meaning kneaded butter. This technique typically is used toward the end of a recipe to help thicken soup, stews or sauces. A roux is very similar but is used in the very beginning of a dish. Bon appétit

    Gina, you remind me so much of my mother-in-law. Her name was Rosalia DiVittorio. I so enjoy you and what you do. Rose passed away in 2000. She loved to cook and bake and was very good at both. Since she isn’t here to teach me her way of cooking I can learn from you. She also would sing in the kitchen while she would lovingly prepare her delicious meals for our family.     Very interesting cooking methods. I would never think to mix just flour and butter together for thickening. I usually make a roux with liquid, but this is so much simpler.
    Making this today!

      It's a very old an common method. Make a ball from butter and flour and stir it until it's melted and the mixed in flour thickens the sauce. You avoid lumps this way. You could of course mix flour and water, the same way you would by using cornstarch and water. But flour has a tendency to get lumpy when made into a slurry.

      Cathie Lamport ...roux in chicken Marsala? I worked in a restaurant never have I seen cooks prep roux that would over take the distinct taste of Marsala wine...perhaps it’s different regions in Italy have different recipes??

      @@themontephone875 you misunderstand..I am not saying I would put Roux in Marsala. I am simply saying I have only used this thickening method in my cooking thus far.
      The method Gina teaches in this video, using only butter and flour is new to me and I am sure it can be used in other recipes other than marsala.
