    been usin sweet marsala for years in my meat dishes. dry ain't bad in a pinch, but I think sweet has more flavor.

    I tried with beef stock and chicken stock. I think I like using beef stock better, it gives more robust flavor 😉 I also add worchestershire sauce 😋

    Now we’re ready to “plate” this: pours entire contents of pan onto plate🤦🏻‍♀️. Question: his mis en place of salt & pepper- was that for decoration? Never got used. The Marsala... never burned off the alcohol prior to adding the meat back in. So, no seasoned meat, no seasoned flour, had to leave the veal in the pan in an EXCESSIVE amount of time so that alcohol burned off so it would be over cooked. Is this his first video?

      I'm looking at different video's and have only seen one that burned off the alcohol. I would think that you would, but again...I've only seen one burn off the alcohol.

      @dom domtwitermail the wine is Sicilian but the dish was created in the 19th century by English families who lived in Sicily, then they brought this dish in England, it's more famous in the UK and USA than in Italy.

    Tried it today over veal scallopini. Awesome! I added onions and garlic to the mushrooms and used about 1/4 cup of AP flour. Kept the chicken stock and Marsala measurements the same. Absolutely delicious and will be using it often.

      Thanks! Yes, there so many variations of Marsala recipes and even I like to use garlic but this is the basics as far as ingredients go in a Marsala recipe..

    Great ideal to add the flour to the mushrooms while sauteing. Toasting the flower thickens up the roux faster and leaves a nutty taste behind.

    This is the recipe's foundation and hold the common ingredients every Veal Marsala recipe uses. Onion, garlic, salt, pepper, rosemary, thyme and other spices can all be added to this recipe ascan Chicken stock. It all about what flavors you like and add to enhance this dish to your particular taste.

    Ingredients • 10 oz. Package of mushrooms • 2 Tbsp. Flour • Salt & pepper to taste • 1/8 cup Olive oil (2 Tbsp.) • ½ cup Chicken Stock • 1 cup Lombardo Marsala Dry. • Note: this is a basic recipe (a starting point). Feel free to add your own flavors and spices along the way. Instructions • Thoroughly rinse and clean the mushrooms under running water. • Mix mushrooms, salt & pepper together. • In a non-stick pan add the olive oil and mushrooms to the pan. • Cover the pan and cook for about 5 minutes or until the mushrooms are tender. • Lower the heat and add the chicken stock and Marsala. • Return the heat to medium high and cook uncovered for about 10 minutes or until the sauce has reduced to a rich consistency.
