Well, it was mostly him trying to deny that HE could lift Mjolnir and it would indeed be a bit too much if Tony didn't follow up in that topic. Stark felt like he had to justify why a random being created out of nowhere was worthy, instead of him, who had his fair share of suffering in his life. And, of course, he had some pride to maintain among the group.
Also, do notice that Steve changes the subject right after Thor says "If he can wield the hammer, he can keep the Mind Stone. It's safe with The Vision, and, in these days, safe is in short supply". Steve hasn't been able to keep the gem safe after the 1st Avengers movie and during this one. He's doing his best to make Thor not see him worthy not just because of modesty but probably for not seeing himself worthy of protecting important artifacts.

I cant really explain what happens to his skin but if you go back and watch his death you'll see his body will still be there after he 'dies'. Rewatching this now, it makes so much more sense. Something like the MCU is really worth rewatching in its entirety every once in a while. You pick up on things you might have missed years ago, might have passed off as unimportant or didn't understand before. I feel like with all the new characters and things they are bringing in, that might become less true from now on, but for phases 1-3 and the start of phase 4, its been very true.

Because action scenes have no depth -- dialogue is very much unique and builds off long story arcs such that quotes and lines actually have meaning.

I always thought he just meant that Vision was trustworthy to hold it in his possession. That's what the whole preceding conversation about lifting the hammer was all about. You have an immensely powerful item, who do you give it to to hold on to it that you can trust?
It is a shame, though, that we never saw Vision really do anything in Infinity War.

They weren't referring to physically safe. Though in most instances that would have been the case, Thanos and his soldiers were stupidly strong. They were referring to safe as in with someone they trust not to misuse the power.

Coat hanger was just holding it in place, not moving it. The hammer isn't super heavy, it just won't move for someone who isn't worthy, like hulk could carry Thor holding the hammer but can't lift it himself. When the hammer was placed on top of Loki's chest, he didn't get crushed, but he still couldn't make it budge

honestly, it's these kinds of scenes that make MCU great. the fighting and special effects are all good and stuff, but it's these scenes that makes us honestly care about these characters
Scenes like this is what makes the Joss Whedon Avenger movies so good. You talk about plot related stuff but at the same time you show how far they've come from that first encounter in the forest after Thor nabbed Loki, and how their relationship has grown.

I think he's just stating that in his opinion the elevator can't lift the hammer because it's not worthy
If you put the hammer in an elevator, the elevator will still go up, lifting the hammer. That means the hammer doesn't care about the worthiness of the elevator. Cap's pointing out that the hammer might treat machines like the elevator and Vision differently from the way it treats people.
Think of the hammer like a loyal dog, trained by Odin.
If you tell a dog "stay" in an elevator, will it ride the elevator until you come back? Will it resist being taken by a stranger?
If you get snatched away, will it wait where it last saw you, expecting you will call it? If that's an elevator, will it ride?
If you're fighting the minions of Surtur, and you tell it "attack", will it run around and bite all of them? Or just the one you pointed at?
If you just beat your evil brother, and the dog can tell you want him to stay put, will it growl and try to restrain him?
The hammer has a dog-like personality, based on Odin's ideas of proper behavior. It will exercise basic judgement as needed.
