CHICKEN BINAKOL - CHICKEN STEW WITH YOUNG COCONUT MEAT AND COCONUT WATER

Chicken binakol is a popular Iloilo stewed chicken dish with coconut meat and water. This is very similar to the tagalog version of chicken tinola which uses green papaya and chili leaves for the vegetables.
Chicken Binakol Ingredients:
1 chicken cut in serving pieces
4 cloves garlic chopped
1 thumb size ginger crushed
3 Tbsp. cooking oil
1 medium white onion, sliced
3 stalks tangled cut into 3 inch pieces
1 Tbsp. patis or fermented fish sauce
1/2 tsp. white pepper or to taste
5 cups rice washing
2 cups grated buko
2 cups buko water
dahon ng sili sili leaves (optional)
1 tablespoon spring onion, chopped (optional)
