Blueberry Squares - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Blueberry Squares! Made with fresh or frozen blueberries, and a few basic ingredient's....See recipe below!!!

    Ingredients:
    Bottom: Topping:
    4 tbsp butter or margarine 2 egg whites
    ¼ cup sugar 6 tsp sugar
    2 egg yolks ¼ tsp sea salt ( optional )
    ¾ cup all-purpose flour 1 cup blueberries, fresh or frozen
    1 tsp baking powder
    ¼ tsp sea salt
    ¼ cup evaporated or fresh milk
    ¼ tsp vanilla
    Method:
    BOTTOM:
    In a bowl, mix together melted butter, flour, sugar, sea salt and baking powder until combined. Separate two eggs in two bowls.
    Then in a small bowl whisk egg yolk, milk and vanilla together and add to other mixture and continue mixing together until combined.
    Preheat the oven to 350ºF and set timer for 18 to 20 minutes, grease square pan and add bottom mixture. Flatten down and place in oven.
    TOPPING:
    In another bowl add egg whites, mix with high speed blender until it foams. Then add sugar and sea salt…Continue blending together for a minute or two.
    When bottom cake is ready remove from oven and top with blueberries and pour meringue over top and spread out.
    Place back in the oven for another 20 minutes or until golden brown. When ready remove from oven.
    Serve hot or cold! Serve with whipped cream or thick cream.
    Bonita’s Tips:
    Room temperature eggs for twenty minutes, before whipping egg whites.
    If using frozen berries no need to thaw.

    Hi Bonita Hi Raymond 👋 hope you both are enjoying your weekend. I love using can milk in baking. I try to keep ii in at all times. Casey and I love it in our tea. This does look like a no fuss dessert. I bet that did smell amazing. I made a dessert similar lol. I had jam in the centre. Wow. I love this. Blueberries are like my favourite those and raspberries. Yup we would have this rough grub too. Great minds. I want to eat this too Raymond lol. My aunt would cook stuff on her wood stove. Loved going there. Wow looks amazing.     I am looking forward to making this when I get back home. We are on vacation in Cape Breton right now. My grandfather was from here. Don't worry, Newfoundland is on the list as our next vacation! 😉

    When we got to Musgrave Harbour for summer vacation, we’re talking late 60s - early 80s, grandma always sent me to pick blueberries for my favourite blueberry duff!

    Hi, my New Fundland friends. I love blueberries so much. So I will be giving these squares a try. Here in the states we don't have heavy cream in a can. I looked on Amazon but didn't find it there either. What is heavy cream in a can?. It didn't look like whipping cream. Is it sweet?. Just curious. It looks "drop the spoon" delicious.

      It’s also known as Devon cream. You could use vanilla ice cream as well.

    I wonder if Rhubarb would be good in this recipe? would you make many changes?

      Yes rhubarb will work but you may need to stew the rhubarb first because it got so much liquid. So pretty much the same way bake the base first. Stew the rhubarb with sugar until its thick. Then pour over the baked base part and top with the meringue and bake again to brown the top. Enjoy and thank you for stopping by.... :) Bonita

      I'm allergic to Blueberries (and I'm from Maine, the blueberry capital of the world) so I'm with you on substitutions. I've had this with raspberries, strawberries and partridge berries and it's a guaranteed winner!

      Hi and thank you so much for stopping by and watching our new video recipe this week. You can substitute with any type of berry, peaches, apple and even rhubarb. If you use rhubarb stew the rhubarb first with some sugar and boil it down before using it. But I'm sure you will get creative with this one. Have a wonderful day and Happy Canada Day!! :) Bonita
