Chetna Makan's Chickpea & Spinach Curry | At Home | Waitrose

  • Vegan chickpea and spinach curry is quick and easy to make with cookbook author Chetna Makan's recipe.
    This recipe uses mostly store cupboard ingredients, using chickpeas as the main source of protein. Serve on its own or with rice, with a slice of sourdough or with naan bread as Chetna is doing.

    Ingredients:
    2 tbsp sunflower oil
    1 tsp cumin seeds
    ½-1 green chilli, finely chopped
    2 cloves garlic, chopped
    1 onion, chopped
    400g can chopped tomatoes
    2 tbsp Cooks’ Ingredients Tikka Paste
    2 x 400g cans chickpeas, drained and rinsed
    400ml can coconut milk
    1 tsp sugar
    115g bag baby spinach, roughly chopped
    Naan or rice, to serve

    I thought Chickpea Curries were pretty much the same - the ones I've cooked anyway. I think this one though is superior. Thank you Chetna.

    You can get all these ingredients in the Duchy Organic range. Bit more expensive but our future depends on organic consumption.
    I made this chickpea curry today using organic ingredients (except the tikka sauce) and it was quite tasty, though it made surprisingly little cooked food considering two whole tins of chickpeas. Half hour simmering I suppose.
    Only problem I had was in order to brown the onions the garlic and pepper got charred. Perhaps I should start with the onion and cumin and add the other two after, say, five minutes.
    I’ll try it again in a couple of weeks. But I need it to make at least four good-sized servings.

    I’m on a diet , and the paste is high in syns for me, can I use powder instead?

      1tsp cumin powder, 1tsp chilli powder, 1tsp turmeric, 1tsp garam masala

      Yes you can, I normally cut them in to small cubes and put it in once the onions have caramelised

    I think this dish takes too long to make considering how many ready to use ingredients are being used. I usually complete making a chickpea curry in just 20 minutes max (if I am using the canned chickpeas).

      @@call_in_sick Agreed! Really, you should leave it for a few hours for the flavours to fully come out, in addition to cooking it for longer.
