Mexican Style Chorizo Sausages with Really smoking in 4K

  • This is a variation of Sausages based on regional flavors of Mexico. Perfect combination of Spiciness and Taste - this is on Spicy side :) . I can bet even in Mexico there are different flavors for the same Chorizo recipe. Whats in it:
    Recipe is for 5 LB ( 2.2 KG) of (70/30%) meat:
    Salt - 35 gr - 3 Tbsp - 1.5%
    Sugar - 15 gr - 1 Tbsp - 0.5%
    Garlic - 6 cloves - 1 Tbsp powder
    Oregano - 6 gr - 2 Tbsp
    Chipotle - 3 gr - 1 Tsp
    Cayen - 5 gr - 1 Tbsp
    Cumin - 5 gr - 2 Tsp
    Ancho Chile - 28 gr - 3 Tbsp
    Achiote paste - 2 Tbsp - read label on packaging
    Water - 1/2 cup

    Chorizo looks good, an important ingredient in mexican chorizo Is vinegar, also you can add small amounts of all spice,clove, coriander seeds, cinnamon, also you can add guajillo dry chiles.

    How much curing salt was added? Was it in addition to the regular salt amount listed?

      Curing salt added according to specifications of manufacturer. From below video info :
