    Thanks for sharing! I would try to minimise the contact of ingredients and brew with plastic ; use no plastic sheet to spread boiled rice and use of glass conaiter for rice fermentation instead of plastic jar.

    In jharkhand (India) there is an almost similar drink called "HANDIYA".
    They also use the same process, including the yeast(RANU).
    Though they don't cover it in blankets(weather/climate difference)
    Seems like cultures across regions develop both in silos and unison.

    There is a village in India specifically in J&K called PADDAR, where this famous drink is made in the same manner. It is called as Chaang.
    The PADDAR inhabitants mostly our buddhist brothers offer this to us whenever we pay a visit there.
    A big like from INDIA. 👍

      Hi, Yes, we used to drink Tibetan chang at Tibetan new year. On other hands, we used to have it so it keeps us energetic and warm since Tibet is cold. Try it and if you have doubts. make a comment and i will write you asap

      Hi I suggest you to mix it normal if you want to drink like smoothie but if you want only watery form then you can use stainer. I have never use blender so sorry for that

      No, you have to use Tibetan phab which will be available in Tibetan market only.

      Only Tibetan Phap will work in making rice beer, not the yeast which is used in making cake and other puff food.

      It is a dry yeast and for 2 kg of rice you may need to add four or five piece of dry yeast..

    When you add the water to the fermented rice after one week, should the water temperature be a little warm, not cold? And you mention leaving the rice to ferment for over a month to make it stronger. Do you need to continue adding more cooked rice to feed the yeast?

      You don't have to add rice. Keep months to make it stronger. It is up-to us whether to add warm or cold water. I saw many adding luck warm water

      @@DickeyDolrecipes Today is Day 8 for my first batch. It looks beautiful. Smooth and glossy with a large dome forming in the center. I'll sterilize a ladle with boiling water, let it cool and have a taste. Thank you for teaching us how to do this.

      Over three and one half weeks ago I started a batch of chang using this recipe. On the eighth day I stirred the pot and added at least a gallon and a half of luke warm water. I've left it alone until today when I unwrapped it and tasted a little glass. Wow! This is exactly what I wanted. Clean, tart, a little sour, and definitely, um,,,,,,,,,,alcohol. Strong but pleasant. I think it has warming properties perfect for Wintertime. Thanks again.

      I am not sure about the normal yeast. I never tried. Dry yeast is made using normal yeast.

      Actually I try with normal yeast but I fail so I used instant dry yeast for it. So I think instant dry yeast is much better for it.

    I use a normal pressers cooker . Generally we take one cup rice and double water . Ie 1:2 ratio

      This can happen if the wine has completed its fermentation and has become still.when an air lock goes dry or taken off the glass jug,fresh air can encourage bacteria to grow.

      Hi,
      i wash the tempered containers, in my case, Korean ongee ceramic jars and lids, inside and out with very hot soapy water, then use boiling water to complete the sterilization. Maybe I'm going overboard with the sanitation, but I haven't had any problems either. Good Luck!
