    I am 76 years old and I was raised in the orphanage from the age of five until I aged out with 180 kids and we had to do a lot of work so I got really creative and I somehow was able to con my way into the kitchen which I was quite a little sociable butterfly when I saw a child and I got in the kitchen and I learned how to become a very good cook and it's from the deep South I'm talking deep south east of Atlanta before I moved to Atlanta to do my education and I have always considered myself a very good cook I'm not bragging it's just a matter of fact but this gentleman Steven he is one of the best chefs grill Master I have ever seen in my life to be able to cook like him would be a god-sent blessing but everybody can't be that talented this man is unbelievable gosh just I would just love to just have one of his dishes I don't know if he has a restaurant I don't know if he'd go to someone's house and cook but I'm not wealthy enough to do that but he's just he's enriched my life greatly and as I get older I appreciate it more and more and I so thoroughly enjoy watching his shows I don't even attempt to do his recipes cuz I know I'll mess it up like I said he's the best bar none and I enjoy his shows greatly.

    Nothing to dislike here, great ideas, technique! Thanks. An idea: place a couple of slices of bacon inside the butterfly cut and then close it. Loin is quite dry, this could help with internal oils and flavors!

    We made this for dinner today. It was quite good. I have a pellet smoker and made it as described but every last bit of the filling that went into the butterflied portion ran out during cooking. The pork in the slit was the same color as the rest and did not pick up any additional flavor. I will definitely make it again but will not bother butterflying the roast.

      @@rickr2915 I Posted that comment 6 years ago and don't recall what veg I served with it but I can say this. I tend to only use the smoker for meats but absolutely love roasted vegetables in the oven. Mix up equal parts by volume salt, pepper & garlic (I keep this on hand as an all purpose seasoning) cut your vegetables into bite size pieces, toss them in some oil and sprinkle with the above seasoning. Then roast them in the over at 425 F till you see some char. This works with broccoli, summer squash, asparagus, bell peppers, cauliflower, brussel sprouts, mushrooms or a combination of them. Delicious.

    Only need to cook pork to 145 with a 3 minute rest. Do this and your pork loin should never be dry. Also 225-250 degrees is a better cook temperature for pork loin than 300. Should be around a 2 hour cook.

    Mustard first, then everything else...mustard then doesn't smear but is a "sticky" substance for the spices etc to adhere to.

    Does the flavor of the mustard come through much, or does it cook out a bit. Because I hate mustard. But I have seen many videos of people using mustard for smoking/BBQing. Just curious if anyone can let me know. I still have to try it atleast for sure.

    I’m reading your book. Project Smoke. I love it. I have a question. It’s there anyway I can substitute brown sugar. With anything else more healthy. I used to be diabetic for 20 years. I changed my mind and habits. Now I have 2 years without insulin or diabetes pills. But I don’t want to eat any kind of sugar or simple carbs. Also I used to be hypertension guy. For 25 years Changing my habits I have 3 months without pills and I feel great and my blood pressure is 120/80 only changed my mind and habits

    Great video. My wife and I don't drink, so could you use apple juice or apple cider vinegar? I love to smoke a pork loin in my Masterbuilt. Will be getting a Camp Chef for Christmas and can't wait to try it. Keep the videos coming.

    So I was wondering sir, I just did this recipe, I didn't use Jack Daniels, I used Crown Royal Apple Whiskey, which I was pleasantly happy with.....but my Pork Loin was a bit dry? Used an offset smoker, cheap one of course, and had a bowl of water in the smoking area, but it didn't seem to do much. Any suggestions?

      You can use beer instead of water. And every now and then thought the smoking process, brush on some juice like pineapple or Apple to keep it moist.

      Dry meat tends to be more a function of temperature than process. Get a good thermometer and cook the roast to about 150 Deg. F. internal temp. Ideally, for a roast like this, you would want a digital thermometer with a remote probe so you can see the internal temp without opening the smoker but any instant read, digital, probe style thermometer will work. Thermoworks makes some great products that meet a variety of budgets.

      I was thinking more about why this recipe might turn out drier than a traditionally cooked pork roast. I think the butterfly contributes to it. As my roast cooked it washed all the sugar, mustard and whiskey out of the cut. I noticed a lot more liquid on my cutting board as it rested as well. I think the butterfly provides a path for much of the moisture to escape from the roast, causing it to dry out some.

      An injection might have been a better way, or leaving the fat cap(Minimal trimming) on and cooking with it facing the up or down depending on where the heat like to travel more in the cooker. Pork loin does not take long, to begin with, so maybe a low and slow with a nice reverse sear at the end could have achieved a better result as well.
