    Fuel your body after cancer with this CANCER FIGHTING salad.
    Ingredients:
    1 cup cooked quinoa
    1 cup cucumber, chopped
    1 cup broccoli, chopped
    ½ cup mint, chopped
    ⅓ red onion, chopped
    ¼ almonds, chopped
    1 15 ounce can chickpeas, drained and rinsed
    1 lemon, juiced
    ⅛ cup olive oil
    ½ cup low fat feta cheese, crumbled
    2 cups mixed greens or spinach, roughly chopped
    Sea salt, to taste
    Ground pepper, to taste
    Directions:
    Add all ingredients to a large bowl and mix. Enjoy. Simple & your entire family will love.

    I add cranberries and walnuts but almonds I do add as well. Great alternatives for a different salad options especially salad dressing and fresh herbs. I also replace mayo of using Greek yogurt and lemon juice and throw in turmeric with pepper (better absorption ratio).
    I will try out this salad recipe with minor alternative once I get my energy up after chemo.
    Also, I drink Ensure Protein Plus (the Cancer Center picks up the tab).

      Chopped tofu mixed with garlic and oregano. Gives somewhat a cheesy texture and taste.

      It’s very easy. Just exchange the dairy for substitute vegan cheese or omit all together

      @@mariejones7136 maybe but I was just going by what the doctor said in the video -the need for protein and she said she used quinoa for that purpose therefore cauliflower wouldn’t be an equal substitute
