Old School Chicken and Dressing•Homemade Cornbread•Homemade Broth•No eggs•Soul Food

  • This recipe was taught to me by my kids late Great Grandmother Marion. I've made a small change to it but the recipe is pretty much hers.. enjoy
    Cornbread:
    1 1/4 cup AP Flour
    3/4 cup yellow cornmeal
    1 tablespoons Baking powder
    1 1/2 teaspoon of salt
    1/8 cup of sugar
    1/2 tsp sage
    1/2 tsp poultry seasoning
    1/2 tsp garlic powder
    1/2 tsp onion powder
    2 eggs well beaten
    1 1/4 cup of whole milk
    1 stick of melted butter
    ** mix the dry and wet separately then combine
    Bake at 425 25-30 mins
    Broth:
    4 large chicken thighs , baby carrots, 3-4 stalks of celery , 1 medium onion, 1 green bell pepper, add chicken stock to cover, season WELL with salt, pepper, onion powder, garlic powder, extra poultry seasoning, thyme, rosemary, sage and a pinch of red pepper flakes .. bake in oven covered for 2 hours
    Assembly:
    Chop 1/2 cup of celery, 1 cup of yellow onion, 1 cup of green bell pepper, sauté in olive oil until tender, mix in 1 can of cream of celery and mix together until combined
    Break down cornbread and add 1/2 bag of Pepperidge farm herb seasoning stuffing mix.. mix well then add sautéed veggie mix, slowly add broth. Once desired consistency is obtained, taste and add additional seasoning if needed, take chicken off the bone and chop into chunks and fold into mixture .. smooth out and bake covered on 350 for 45-1 hour. Let rest for 20-30 minutes before serving..
