    I'm European but I have never tasted anything as amazingly delicious as Southern cooking. I'm in love with soul food, Cajun spices and all that sweet tea. You Southern people really know how to enjoy life and your food says all that for you.

      blackericdenice I'm white and I eat fried chicken weekly. Because I'm from the south where everyone of every race eat fried chicken weekly. Blacks outside the south eat fried chicken weekly because their origins are from the south. Same for any whites or some other race outside the south that cook and eat fried chicken weekly, it's likely they have origins in the south. Down here in the south, we all cook and eat fried chicken weekly, because it's a southern food and southern tradition. It has nothing to do with race, but everything to do with southern origins.

    I like to let my chicken sit on a cookie/baking rack for about 10-15 minutes before frying. It allows the coating to "set up' on the chicken. The chicken comes out more crispy. #yum

    When I was in high school back inn 1966, I got a job at a local eatery that had KFC. It was the only place for miles around to buy fried chicken! After school, I'd go cut up the whole chickens, prep 'em and fry 'em! I'd cook as many as 30 pots a night. (2 chickens per pot) Back in those days, The COL. would visit all of his stores. He came in one night and watched me fry his chicken. I passed with flying colors!

      rkgsd New evidence says canola oil, soybean oil corn oil all bad plus they are gmo oils hexane used to make them.Coconut oil or olive oil is the healthy oil even lard is healthier than canola or corn or soybean called vegetable oil folks don't let them fool you they fooled me for too many years.Coconut oil or olive oil or lard is safer

    If you want them even crispier, after you pull them out of the butter milk and into the flour, try double dunking them back into the butter milk and into the flour one last time before frying them. Trust me, they turn out so much better !!

      No, a prevalence of refined sugars is why obesity is so common (with an assist from the fact that very few people actually "labor" for a living.) People were a lot leaner and healthier back in the days when nobody thought twice about deep-frying dinner.

    Ingredients:
    3 1/2 pound chicken, cut in 8 pieces
    1 tsp salt
    1 tsp black pepper
    1 tsp paprika
    1/4 tsp cayenne
    1/2 tsp white pepper
    1 tsp ground dried herbs (oregano, thyme, rosemary, sage)
    2 cups buttermilk
    for the seasoned flour:
    2 cups flour
    1 tsp salt
    1/2 tsp paprika
    1/4 tsp cayenne
    1/2 tsp white pepper
    1/2 tsp garlic powder
    1/2 tsp onion powder
    2 1/2 quarts peanut oil for frying

    My Grandma fried chicken in a cast iron skillet,then she used the fryings for gravy with mashed potatoes,biscuits.She also cooked up quail,pheasant and a lot of other meat with Gravy,potatoes,biscuits,she also used bacon grease,lard,real butter.Damn Good Eating.Probably not Healthy by today's standards.My Grandma could COOK,She actually taught my WIFE HOW TO COOK.My WIFE HAS CHANGED a lot of Grandmas recipes, for a more healthier option/KINDA OF THE SAME BUT NOT THE SAME/,but several times a year she will bring out Grandmas recipes,(GRANDMAS, OLD COOK BOOK,THE ORIGINAL VERSIONS) and COOK OLD SCHOOL ON A HOLIDAY WEEKEND,USUALLY A SUNDAY DINNER/BIRTHDAY OR SOMETHING,YEA IT'S BAD FOR YOU, BUT IT TASTES SO DAMN GOOD.EVERY BODY GOES HOME FULL.

    To make buttermilk use 1 cup of milk......add 1 teaspoon of distilled white vinegar (or 2 cups 2 tsp). Wait 5 minutes and you have buttermilk.

      Yummmm...I've had Louisiana fried chicken before...loved it.
      I made 8 pieces (4 drumsticks and 4 breasts) using this recipe. Damn..it was yummy!! Went to the local bbq place though, to buy a quart of mashed potatoes and green beans as sides. Whew...that good chicken sunk me into a food induced coma and I woke up late Monday morning.

    Most of my friends and peers don't know how to cut a whole chicken but my grandparents taught me. They are southern

    My southern mother taught me to fry chicken in an iron skillet, which by the way was the best I ever had. And her gravy .... yum. After seeing your video I’m rethinking the whole process. Frying chicken in one batch makes a lot of sense and less worry. So I’m going to give it a try. Thank you Chef John!

    Hi Chef. Thank you uploading and sharing. I have a suggestion for you to try. To the flour and spices,add third of the amount dry Mash potato flakes ( preferably powder instead of flakes). It is insanely good. I like it double dipped in butter milk and flour and rested 10 minutes before deep frying.Yummoo

    Love the recipe and video. My chicken would be completely burned if left it in for that long. At a holding temp of about 310F, mine takes only about 10-15 minutes total. I got up to 165 F internal temp in the chicken. It was perfect! So, if it looks like yours is burning, consider removing earlier and check the internal temp to make sure it's done.

    We never could afford chicken but squirrels, rabbit and groundhogs all hold the batter real well. You can also use baby catfish its like a drum stick. We catch a bunch at night loading grammas panty hose with hooks, moss, and worms. Use a big flash light to guide the catfish to the hook sack. You can also batter frogs and crayfish but they don't have much meet like the groundhogs.

    Lol, my grandma loves the wing tips. I let my meat go over night and I use the mix of what ever bread crumbs I want to use and flour. In a black house hold fried chicken is like 3 times a month. lol At least at my parents it is. My father LOVES fried chicken. You know my grandma used to do it in her cast iron skillet. =)
    You should have eaten some I love hearing the crunch.

    I´ve just make mine and it is sooooo moist! the best i´ve done so far.
    i used fresh garlic, ginger and onion and salt paste, cayenne and white pepper, powder oregano, saffron and nutmeg in my seasoning. then put it in the butter milk (homemade) for 2 hours.

      Yea people whove been doing it for years make it look and sound easy. I learned that the hard way in cooking school. Chef john did a video where he easily de-boned a whole turkey without tearing it to shreds and it blew my mind.

    i hate to admit it, but as a youngster i loved next day KFC, cold fried chicken...after making Chef's Buttermilk fried chicken and then leaving some for the next day, I had some cold the next day, and oh man, delicious treat!!! This recipe, hot or nextdaycold, superb!!!

      +andrea raffol Yes, you can re-use oil quite a few times. You can even filter all the bits out of the oil and refrigerate it for later use :)
