You probably used chocolate with a higher content of cocoa solids. In this case, you can add a bit more milk until the desired consistency. Milk chocolate has about 15-30% cocoa solids, and semi-sweet has about 40-55% of cocoa solids. You may get a different result if you change the type of chocolate a recipe calls for.

If you use a full-fat brick cream cheese (that is more firm), not low fat or spreadable cream cheese, you can do without gelatin.

Yes, but the chocolate cake won't be so fluffy after refrigerated.

My mousse wont set :( i tried this recipe twice
It's probably the gelatin since it's the gelatin that helps the mousse to set after refrigerated. I don't know what happened to your mousse, but I can share a couple of tips: 1 - Add the gelatin to room temperature ingredients, or it might form lumps instead of dissolving completely into the mixture. 2 - Never overheat the gelatin, or it will lose its setting capacity.
