How to Make Pulled Jackfruit and Local Pulled Quince

  • Lately, an international food trend has been vegan pulled jackfruit served in a sandwich. It is tasty - but the canned jackfruit is not local in many parts of the world. In this video I make a variation of pulled jackfruit with local pulled quinces. The quinces are from my sister’s garden not far from Copenhagen. The BBQ sauce is the same as I use for pulled pork or duck. The flavor is good if you like spicy food. The pulled jackfruit has a texture that is similar to meat, while the pulled quince is a bit more like chutney, but still very tasty.
    Recipe for Sandwich with Pulled Fruit and Cabbage-salad
    BBQ sauce
    2 table spoons of concentrated tomato puree
    50 g brown sugar
    2-4 table spoons of sambal oelek or other chilisauce
    Grounded spices:
    2 tea spoons of smoked paprika
    2-4 tea spoons of liquorice powder
    2 tea spoons of salt
    ½ dl of apple cider vinegar
    Pulled fruit (Jackfruit or Quince)
    2 cans of green jackfruit in brine - not sweet (2x280 g)
    or 500 g peeled local quinces
    2 yellow onions, chopped
    4-5 cloves of garlic
    ½ - 1 fresh chili, chopped
    ½ dl olive oil
    1 portion of BBQ-sauce (see the recipe below)
    App. ½ cup of water
    1. Open the cans and drain the jackfruit in a strainer or peel the quinces and cut them to pieces.
    2. Fry onions, garlic and chili in hot olive oil. Add the fruit and fry for some minutes.
    3. Add the BBQ-sauce and water. Leave to cook under a lid for around 45 minutes. Take a look when half done and add more water if the fruit is dry or take of the lid if it is to wet.
    4. Pull the fruit with two forks. Put it on baking sheets and bake 15-30 minutes in a 225 C warm oven until the fruit is golden and roasted - but still juicy.
    Sandwich with pulled fruit
    4 good buns
    1 portion of pulled fruit (see the recipe above)
    Cabbage-salad:
    200 g white cabbage
    1-2 carrots
    1 apple
    Marinade:
    1 tabel spoon of Dijon mustard
    1 tea spoon of salt
    1 tea spoon of sugar
    2 table spoons of apple cider vinegar
    ½ red onion, finely chopped
    Optional: pickled cucumber (gerkins) and/or mayonnaise
    1. Cut the cabbage finely and add grated carrots and apple. Mix it.
    2. Mix the ingredients for the marinade and mix with the cabbage mixture. Leave it for at least half an hour. Drain the salad.
    3. Warm buns and add the cabbage-salad, the warm pulled fruit, and optionally pickled cucumber and/or mayonnaise.
