Delicate ”Smørrebrød” at ”Restaurant Palægade” in Copenhagen

  • The Danish open sandwich “Smørrebrød” (Danish Open Sandwich) is a Danish food tradition that can be made in many ways. We have several restaurants in Copenhagen serving smørrebrød with different culinary styles that are good in each their way. I am a fan of “Restaurant Palægade” - maybe I am a bit in love with this wonderful high end culinary style.
    This restaurant started in 2016 and is based on good skills in the kitchen as well as in the restaurant. The classic drink pairing with old school Smørrebrød is beer and aquavit but here also a sommelier can help you choose the best glass of wine for your delicate smørrebrød.
    In this video you meet the team behind this unique place: From the kitchen the skilled Betina Madsen and Karina Pedersen. The front figures are Simon Olesen and Rasmus Amdi Pedersen. They talk about the philosophy behind the food and drinks.
    I enjoy a unique lunch in a modern and renewed culinary style with my friend Lars Bjerregaard who is a writer.
    Two pieces of “Smørrebrød” is usually enough but some would like to have three pieces or a dessert.
    We started with herring: “Red pickled herring with warm spices, egg yolk and tabasco” and “Warm fried herring with mustard, onions and capers”
    Then Lars had a winter season specialty: “Fried cod roe with remoulade and lemon”
    and I had the crazy good house specialty: “Tatar of lobster with crispy fried egg and cress”.
