Snail Caviar from a Danish Snail Farm

  • You should taste it! The caviar or salted raw eggs from the free range land snails are grown organicly in a Danish farm close to Copenhagen. It is a speciality also called white pearls and they are juicy with a complex flavour. The flavour of snail caviar could be described as cooked asparagus and it has woody notes, a strong earthy flavour and lots of umami.
    In this video you meet the snail farmer Ditte Ankjærgaard. They farm free-range snails of the species Helix Aspersa Maxima which is the species used for the very exclusive “escargot caviar” also known as “escargot pearls”.
    Snail caviar or escargot caviar has an extremely delicate taste and the eggs very decorative pearly white and with the same size as salmon caviar/eggs. The caviar is manually sorting and carefully selected. Then they are marinated only with salt before they are packaged in a special tin for caviar (30 grams).
    In my kitchen I make a super simple serving with this unique product.

    RECIPE
    Rygeostecreme - Fresch smoked cheese - with snail caviar
    4-5 servings
    30 g of fresh snail caviar
    100 g of fresh smoked cheese (rygeost)
    100 ml heavy crème (piskefløde)
    1 handful of fresh parsley
    A bit of salt
    4-5 small leaves of crisp salad (hjertesalat)
    Optional: Bread
