This is the best recipe for me. The pre-cooking of the chicken (instead of ground meat) plus the sauce mixed in makes the empanada stick together and not fall apart once you bite it. In addition, the recipe for the pastry and procedure (butter & egg needs to be cold), keep in the fridge... makes the pastry dough stretch that will enable to hold 3 tbsp of filling. Amazing!!!! 5 star. My empanada is meaty.

Hello! I’m new to baking and working with dough. This is my first attempt at something other than pizza dough and sourdough bread. What does the vinegar do for the dough? Is it for taste or some sort of chemical reaction? Just here for some knowledge. 😅

Can I use 1 cup broth instead of half broth and half wine? Also, how long can the dough stay in the fridge once it is wrapped before baking? I'd like to be able to premake dough for the future. I love your crust. It is very forgiving during assembly and it is flaky and delicious. Two thumbs up!!!

Hello - if a food processor is not available, I’d suggest manually cutting fat into flour using a fork, knife or pastry cutter. I would not suggest a stand mixer or hand mixer. Hope this helps! 😊

For myself, fork crimping is easy and fast, but when preparing for guest I pinch and fold, looks better.

Hi Tina - I'd suggest using any dry white wine (e.g. a chardonnay), but the actual brand doesn't matter. I just used whatever was left in my fridge (don't remember the brand). Hope this helps! :)
