The Best Lasagna | 30 Minute Challenge

RECIPE:
Mom's Lasagna
For the Red Sauce:
-1/2 Medium Yellow Onion, diced small
-2 Stalks Celery, diced small
-1 Large Carrot, diced small
-1 lb. Ground Beef
-1 lb. Hot Italian Sausage, casing removed
-2 x 28 oz. Cans San Marzano Tomatoes
-1/2 Cup Red Wine
-2 tsp Kosher Salt
-1/2 tsp Black Pepper
-1 Tbsp Italian Seasoning
-1 tsp Sugar
For the Béchamel Sauce:
-4 Tbsp Butter
-1/4 Cup Flour
-4 Cups Milk
-1+1/2 tsp Kosher Salt
-1 tsp Black Pepper
-1 Dash Nutmeg
-1 Dash Cayenne Pepper (optional)
For the Lasagna:
-1 Package Lasagna Noodles (regular or no boil noodles will work)
-6 oz. Parmesan
-1+1/2 Cups Mozzarella
🌱Vegan Modification: Sub in 16 oz. sliced mushrooms for ground beef and sausage; use olive oil and oat milk in the béchamel instead of butter and mink
1️⃣ Make the red sauce: In a large pot over medium high heat, saute the onion, celery and carrot until tender (~5 min); add the ground beef and sausage and sauté until cooked through (~3 min); add the san marzano tomatoes (including juice), red wine, salt, italian seasoning and sugar; bring to a boil and then cover and simmer for 30 mins
2️⃣ Boil noodles according to package directions and then place on a baking sheet and coat in olive oil so they don’t stick
3️⃣ Make the béchamel sauce: In a pot over medium high heat, melt the butter and then stir in the flour with a whisk; cook the flour whisking constantly for 1-2 minutes and then start gradually pouring in the milk 1/2 cup at a time, whisking so that the milk is fully incorporated before adding more; once all of the milk is added, continue whisking until the white sauce comes to a boil and has thickened; mix in the salt, pepper, nutmeg, and cayenne; turn off the heat
4️⃣ Preheat the oven to 375°F
5️⃣ Add a thin layer of the red sauce to a 9x13 baking dish followed by one layer of the lasagna noodles (break the noodles to fill in the gaps if they don't fill out the dish perfectly); on top of the noodles, layer red sauce, white sauce and parmesan; repeat until the baking dish is full (you may have a little extra sauce), ending with white sauce on top
6️⃣ Top the lasagna with mozzarella and a generous amount of parmesan cheese and cover with tin foil; place on a baking sheet and bake for 25 minutes covered, then remove the foil and bake for 15-20 more minutes until the top of the lasagna is golden brown and bubbly
7️⃣ Let set for 5-10 minutes and enjoy!

I used to cook with my dear mom. She also cleaned up while cooking. Me? I save it for later and regret it every time I have to clean up the huge mess! As an Italian American, I have never made lasagna without ricotta or mozzarella between the layers, so I was looking forward to seeing the finished product. Oh well…
