INGREDIENTS:
For the Brine:
-1+1/2 lb. Chicken Tenders, visible tendon removed
-2 Cups Buttermilk
-2 Tbsp Salt
For the Dry Batter:
-1 Cup Flour
-1/2 Cup Cornstarch
-1 tsp Kosher Salt
-1 tsp Baking Powder
-2 tsp Garlic Powder
-2 tsp Onion Powder
-2 Tbsp Paprika
-1/2 tsp Cayenne Pepper
-2 tsp Ground Mustard
-1 tsp Celery Salt
-2 tsp ground ginger
For the Wet Batter:
-1/2 Cup Dry Batter
-2 Tbsp Cornstarch
-1/2 Cup Water
-Canola Oil for frying
