- This video will show you How to Cook Super Crispy Pata. This is crispier than the regular and I also included the steps on how to make a yummy dipping sauce for it.
It is a perfect dish to make for the Holidays. I always make this for my family during Noche Buena and family reunions. Enjoy!
Crispy Pata Ingredients:
1 piece pork pata 4 lbs
4 tablespoons Knorr Liquid Seasoning
6 pieces dried bay leaves
2 pieces red onions wedged
7 cloves garlic crushed
1 tablespoon whole peppercorn
2 quarts peanut oil
3 quarts water
Dipping Sauce Ingredients:
1 cup white vinegar
2 tablespoons Knorr Liquid Seasoning
1 piece red onion chopped
3 cloves garlic crused
2 tablespoons scallions chopped
½ teaspoon ground black pepper
1 teaspoon red pepper flakes
1 teaspoon white sugar

Pag napakuluan na at lumambot na - puncture the surface repetitively using fork. Tusuk tusukin lang ng mdami. This lets out air and water trapped in the meat. This will allow the under skin to achieve constant and same crispness as the outsude. Then using strainer let it cool and DRY for an hour or more before putting it in the ref for overnight. You fry the next day only after a couple of minutes taking it out from the ref. Been doing it for 25 years and never fails me. :)
I do it that way too...the oil should be pre-heated.

Naalala ko nung naging cook po ako sa mayamang pamilya sa mckinly hills,tulala talaga si sir bakit sobrang sarap daw ang niluto kong crispy pata?tinanong niya ako kung paano ko raw niluto? Mas malasa po talaga kapag knorr liquid seasoning ang gagamitin.. Kaya paborito ko po yan at halos lahat ng niluluto ko na ulam ay nilalagyan ko po ng knorr liquid seasoning.. 👌
Sinundan ko po ito masarap po. Nagluto din po ako ng bersyon ko na may twist masarap po naman sa bagonkong sawsawan ang 7-up at pipino.
