    This doughnut recipe is not your typical one because it uses baking powder instead of yeast and so it's much quicker to make and less waiting time! Of course, a raised dough with yeast is still fluffier and has that distinct flavor.

    Ingredients:
    2 1/4 cup all purpose flour
    2 tbsp baking powder
    3 tbsp sugar
    1/2 tsp salt
    3/4 cup milk
    1 egg
    2 tbsp vegetable oil
    2 tsp ube flavor
    Filling:
    3/4 cup ube halaya (I used store bought halaya but you can also make your own)
    60g-100g quickmelt cheese (cut into 5g cubes)
    Dredging:
    3/4 cup skimmed milk powder (or regular powdered milk)
    1/4 cup powdered sugar
    Vegetable oil for frying
    Note:
    You can also use yeast in this recipe if you want a real yeasted donut. Here are the changes you will make:
    1. Replace baking powder with 1 teaspoon instant dry yeast, combined in the flour and other dry ingredients
    2. Instead of resting for 15 minutes, let the dough rise covered in a greased bowl for 45 minutes until doubled in size
    3. Deflate the dough and proceed to portioning/cutting. Afterwards continue to add the filling
    4. Once all the doughs were filled, let them rise again covered for 20-30 minutes until almost doubled in size
    5. Gently pick them up and fry both sides over medium heat until slightly golden
    6. Place over paper towels or dredge into prepared powdered milk and sugar mixture right away. Best served warm
