Before You Cook Perfect Nigerian Jollof Rice Watch This | Tastiest ever

  • JOLLOF RICE RECIPE
    *Ingredients:*
    - Tomatoes: 4 large
    - Red bell pepper: 4 large
    - Habanero Pepper: 3
    - Onion: 4
    - Chilli: 4
    - Ginger: 4 inches long
    - Garlic: 1 clove
    - Tomato paste: 140g
    - Oil: 1.5 cups
    - Bouillon: 2 tbsp
    - Curry: 4 tbsp
    - Thyme: 4 tbsp
    - Fresh rosemary
    - Bay leaves: 3
    - Rice: 4 cups
    - Butter
    *Instructions:*
    1. In a pot, add the chicken,
    curry, thyme, 3 bay leaves, fresh rosemary, garlic, seasoning cubes and ginger. Mix together and boil in its own juices for about 2-5 minutes. Add 6 cups of water and bring the mixture to a boil.
    2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until translucent. Add the chicken to the pot and cook until browned. Remove the chicken and set aside.
    3. To the same pot, add the tomato paste and fry for about 5 to 8 minutes. Then add the blended tomato base and fry until the oil separates.
    4. Pour in the chicken broth. Bring the mixture to a boil and add the rice.
    5. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked through and the liquid is absorbed.
    6. If using optional vegetables, stir them in during the last 10 minutes of cooking.
    7. Once done, fluff the rice with a fork, add butter, and let it simmer for a few more minutes.
