Duck and plum is a tried and tested combination in Asian cuisines indeed (roast duck with plum sauce). Gordon has interesting ideas like serving the actual plum together with plum sauce in the noodles, while searing/glazing the plum sauce with duck. This is a fusion between Asian and western cuisines, great. Very balanced meal with duck protein, noodles, bakchoy and plum!
Gordon has been waiting years to say that Tosser joke. He enjoyed it so much and you can tell, I did too tbh 👍🏽🤷🏽♂️🤣🤣🤣🤣

I made my own broccoli slaw using the same technique he used from the cauliflower in the ramen dish a few videos back. Just shred it with the cheese grater.

@@lfmm97 That's how I do it. I get fresh duck breast every fall from my friends that hunt. Salt and pepper, a little olive oil, on the grill, medium rare. Sublime.

Please do not cut bokchoy. It's so much better either whole or cut in half. Gordon always changes Asian recipes like crazy that would be taboo lol
@@readabook5823 You're right, but when it comes to the 10minute recipes it's quite important. A whole or half cut bokchoy would not be able to cook in time with all the mixture of flavours. So in this instance it's better to chop for a quick cook and good taste (even if you could get a better taste whole and over longer time)

For amateur, i would recomend start using a cold pan, because you're not yet master the heat. There's a big tendency that your maillard reaction/caramelisation occured before the fat is melted

I thought that when cooking duck breast we start with a cold pan, still the recipe looks bloody delicious.
Yea this works a lot better at rendering the fat out, so you're left with a thin crispy skin at the end
He was trying to do it in 10 min so he used higher heat and start with high heat

@@ijustwannaleaveacommentony6511 haha if you look at it he was already pre-heating the pan on high heat right after he wipe it with oil then move on to scoring and seasoning the duck, that saved him a few minutes heating the pan while scoring and mucking around with the duck
