      Coliflower steak is so delicious.
      Just take one coliflower and add loads amd loads of butter, oil, salt, nuts, lemon, and herbs. Add whatever is in your fridge and pantry, chop it up and you have a delicious coliflower steak. You will forget you even added coliflower.

    If you're careful you can get two "steaks" out of the cauliflower.
    We've been making cauliflower "steaks" at our home for at least a decade, we just cover each steak with olive oil and then salt, pepper, garlic powder, and paprika. Then we grill it briefly to get grill marks and then move it off direct heat until it softens. The entire family loves it! I'm going to give Gordon's recipe a try as the ingredients are really interesting.

    Cauliflower with mustard is interesting because they come from the same plant. Cauliflower, broccoli, cabbage, kale, Brussels sprouts, all come from the mustard plant.

    Thank you. I love the eggplant steak recipe too. Striving to be plant based and love your recipes. We’ve been vegetarian for two years now and love it! My husband and two sons in their twenties were fine with meatless days several days a week their entire childhood so moving to all veg wasn’t hard. And produce is so beautiful work with! My husband says he doesn’t miss meat either. My boys are at university and one has graduated and working and cooking in his own apartment, and they still make sure to have meatless days.

    I love how many different spices/ingredients he uses. I'm not a huge fan of just plain dishes with a couple things mixed together (unless I was in a rush) ..because that's just boring otherwise
    That's the thing I like about cooking. Experimenting with all those different options..it's like an artistic project you can eat after

      This is the Italian "Salsa Verde". The Mexican one is made with green tomatillos. "Salsa Verde" means "green sauce" in both Spanish and Italian

    Just made this for my family for dinner and it is delicious! I am the only Vegan in our home but everyone loved it. I will make this again. I tweaked the recipe by adding the salsa verde to the pan and cooking it with the cauliflower. I also swapped the red wine vinegar for white cooking wine, and I used ground cumin instead of the caraway seeds. YUM!

      Hi @@johnnunn8688 I made some slices and then I put the rest of the larger pieces in the pan too. Only the small crumbles were wasted which wasn't much at all.

    This was delicious. We served it on top of a creamy tahini eggplant puree. You could turn the remaining cauli into a mash and serve it over that. The creamy texture with the roasted, toasted, and herbal textures was heavenly.

      I've done it on a BBQ. Marinated it the same as meat. But found bits fell through the BBQ rack, so 2nd time I did it I heated up a sheet of metal on top of the rack an cooked all the veg on that in the same way the meat was done.

      Sous vide for a pre cook and finish on a grill /pan or roast would be the easiest way

      You can make these in the oven as you would roasted veggies on a baking sheet. Prepare marinate in a pan and then drizzle on filets. At halfway mark flip and drizzle again.

      I would suggest an eggplant that has been soaking in a broth for a few hours (draw the moisture out first with some salt for 15 mins)
      Then use a fork to punch hole in the flesh of the eggplant and fry it

    I have started doing whole roasted cauliflower in a cast Iron, but it takes a long time. oil, salt, pepper, spices put in the cast iron and cover with foil. Put in the pre-heated oven at 375 F for 30 minutes, remove the foil and cook for another hour. The best bit is the bottom of the cauliflower where it is super brown and crispy from the cast iron.

    Yeah nah... just chop it up. It's too easy to either overcook the florets or undercook the stem. Chopping the cauliflower up also means they sop up more of that buttery goodness.

    So, I'm from an area of Chicago that has a pretty extensive Mexican population, and never once have I heard of, not only adding, but bathing, salsa verde with olive oil. Guess the UK is taking artistic liberties with traditional Mexican cuisine here.
