Easy Pork and Red Capsicum

  • Pork and Red Capsicum (bell peppers) makes a fast midweek dinner full of flavour and colour. With just a few ingredients, make this tasty meal in as little as 20 minutes.
    No red capsicum? Use green or yellow or combination of the three to create a colourful mid-week dinner.
    Pork and Red Capsicum (bell pepper)
    2 tbsp oil
    2 cloves of garlic - peeled and finely chopped
    1 tbsp minced ginger
    1 red capsicum (bell pepper) seeds removed and diced
    500g pork mince
    1/4 tsp salt
    freshly cracked black pepper to taste
    1 tbsp dry white wine (optional)
    1/2 tbsp oyster sauce
    1 tbsp soy sauce
    1 green onion - sliced
    Heat pan over a medium heat and add oil.
    Add garlic, ginger and diced capsicum to hot oil and sauté over medium heat for 1-2 minutes.
    Add pork mince and break into medium sized bits. It will continue to break apart and separate as it cooks.
    Stir regularly as the meat cooks over the next 3-5 minutes. Don't overcook the pork as it will become dry.
    Add salt, black pepper, wine (optional), oyster sauce, soy sauce and spring onions.
    Mix well and cook for a further 1-2 minute or until cooked through. Don't overcook and dry out the pork. There should still be liquid in the pan. This is used to pour over the pork once served.
    Serve with some of the pan juices and spring onions.
