Pretty Pink Beetroot Pasta Sauce

  • A shocking Pink Pasta for Valentine's dinner or Halloween party. This fun pasta dish is given its naturally intense deep pink colour from beetroot. Turn this meal into a romantic dinner for 2, a creepy (and healthy) Halloween dinner or just as a fun way to brighten up a midweek dinner.
    Pink Beetroot Pasta
    250g pasta - cooked as per packet direction
    1/4 - 1/2 cup reserved pasta water
    250 - 300g cooked beetroot
    1 clove of garlic - roughly chopped
    small handful of walnuts
    1/3 cup grated Parmesan cheese
    1 tbsp lemon juice
    Fresh cracked pepper
    salt to taste
    Cook pasta following package directions. Reserve 1/2 cup of pasta water. If needed this can be used to thin out the sauce. Depending on how juicy your beetroots are, you may need only 1/4 cup or none at all.
    Into a container add cooked beetroot, garlic, walnuts, grated parmesan and lemon juice.
    Using an immersion blender, blend ingredients together to create the pasta sauce. Start by pulsing the blender for the first 30 - 60 seconds.
    If the sauce is too thick, use some of the reserved pasta water to thin it to your liking.
    Taste and add salt if needed.
    Put hot, strained paster into a bowl or return to original cooking pot.
    Add the beetroot sauce to the pasta and mix well. The pasta will absorb some of the sauce, so you may need to add some more pasta water to thin out the sauce again.
    If needed, return the pasta to the stove top and reheat on a low setting.
    Serve with a few walnuts and freshly cracked pepper.
