2 cups (200g) blanched almond flour
1 cup (175g) vital wheat gluten (I used Anthony’s Vital Wheat Gluten)
¼ cup (50g) powdered erythritol
½ teaspoon (2g) salt
½ teaspoon (2g) xanthan gum (optional)
3 teaspoons (11g) instant dry yeast
1 cup (250mL) warm unsweetened almond milk (105°F-115°F/41°C-46°C)
¼ cup (60g) melted unsalted butter
¾ cup (150g) granulated brown sugar substitute (I used Lakanto Golden)
2 tablespoons (16g) ground cinnamon
⅓ cup (76g) melted unsalted butter
½ cup (80g) chopped walnuts
Cream cheese drizzle (optional)
4 ounces (125g) softened cream cheese
2 tablespoons (30g) unsalted melted butter
1 teaspoon (5mL) vanilla extract
¾ cup (150g) powdered erythritol
pinch of salt
2-4 tablespoons (30-60mL) unsweetened almond milk (depends on the consistency that you want to achieve)
Bake for 350°F (180°C) for 45-50 minutes.
Yields 16 rolls (macros per roll)

FIBER: 2.8g
FAT: 14.0g
PROTEIN: 9.8g
CALORIES: 179
NOTE: For best results, I highly recommend using the metric/gram measurements (using a digital scale), rather than the standard/cup measurements.

I think the thumbs down are from jealous, lazy people 😂. You do such a wonderful job.
Maybe cause it uses things like gluten. I don’t use it on my diet since I don’t think it’s healthy, but as for me, I just leave the video when I see ingredients I’m not comfortable with. I don’t give neither thumbs up or down.

I really enjoyed making and eating these! I have a few notes that may help people out: These are kind of time consuming to make so I actually didn't bake them until the next day. Finished preparing them at 1:00pm, kept in fridge overnight and then baked the next morning. Worked great to prep ahead of time! The dough is awesome! Very chewy consistency and very bread-like. The only thing I did not like is the frosting. I used confectioner's Swerve and it had the worst aftertaste and for my taste the recipe uses way too much. I went all in and smothered the pan of rolls with all of the icing. Made them look pretty and like the real deal, but after trying them and realizing I didn't like the icing I scraped it all off the best I could. I re-made icing with just the cream cheese and butter whisked together. Much better in my opinion. I like the contrast of an unsweetened cream cheese topping on the rich, sweet rolls. Great recipe overall though....will please Keto people with a sweet tooth. :). Thanks Ketoserts for the beautiful video!

Is there an alternative to using vital wheat gluten? I have read it can contain more gliadin than normal wheat bread which can cause inflammation in people who are gluten intolerant and not necessarily Celiac.
Hi! I believe there’s no substitute for wheat gluten in this recipe, we need this to achieve the bread like texture. And yes, I don’t recommend this for people who are sensitive to gluten.

it seems you are using the vital wheat gluten more often now...I'm afraid to use it again as I have mentioned previously when I attempted to bake the bread recipe. Having said that, you are my favourite channel for keto recipes. x

Keto diets do not have to be gluten free. The vital wheat gluten is high in protein and low in carbs. It can also give keto flours the body they need to make doughs that are close to the real thing. The vital wheat gluten could be the ingredient your recipe needs to add that texture and structure to the baked goods. blog.modernistpantry.com/advice/keto-dough/
Vital wheat gluten is a combination of proteins, gliadin and glutenin. Your confusion probably stems from the fact that gluten is primarily associate with wheat, and its derived products, and bread and pasta made the normal way are definitely not keto friendly.
Seitan is essentially just gluten. You make some wheat dough, to form the gluten, and then keep rinsing out the wheat starch until only the gluten is left. This is keto friendly. To make vital wheat gluten, you dry out the seitan, and grind it into powder.
This is also not the first low carb bread recipe with VWG. You can search some bread recipes and it is normally used to make low carb bread to achieve the real bread texture.

So would this dough make a good hot dog bun or sandwich bread? I can only get those magical zero net carb breads on amazon(at 10 bucks a loaf!) They taste great but I'm dying to find something like them. They use wheat gluten as well other things like tapioca starch(I don't how they make it (carbs). This looks the closest I have seen to the texture of bread dough and I have watched a lot of videos! Thanks for the inspiration maybe I will succeed?

You can try replacing it but I cannot guarantee you the same results. VWG gives the texture of the real bread.
