In this video I'll be sharing my very best butter cake recipe! It took me about 15 tries to get to this cake, as I was struggling to get the perfect balance of flavour and softness, but I finally got it! This butter cake is soft, fluffy and goes perfectly with a hot cup of tea! I LOVE having butter cake slightly warm, so if I'm having it the next day, I'll heat it up in the microwave for about 10-15 seconds. If you haven't tried butter cake warm, then you need to try it! :D I hope you all enjoy the recipe!

INGREDIENTS:
All ingredients must be at room temperature :)
- 1 cup (220g) salted butter
- 1 cup (220g) caster sugar
- 1 tbsp unflavoured vegetable oil
- 5 eggs
- 1 and 3/4 cups (220g) all purpose flour or cake flour
- 3 tsp baking powder
- 1/2 cup (112g) buttermilk
- 1 and 1/2 tsp vanilla extract/essence
- If using unsalted butter, add in 1/2 a teaspoon of salt to the dry ingredients
- Regular sugar can be used as a substitute for caster sugar
Bake at 150c for 1 hour or until a toothpick comes out clean. Do not open the oven too early otherwise this will effect the texture of the cake. If you want to check your cake earlier, then only start checking it at 50 minutes :)
I used an 8 inch square cake tin for this recipe, but any 8 inch tin will work :)

This is too good! I made half recipe as I don’t have enough butter but it turns out really well. Really soft, buttery and most importantly the sweetness is just right. Even my parents love it❤

Thanks so much Lorraine! I almost gave up haha but glad I persisted :D and yes you can totally pair it with some whipped cream or any frosting you like really! Chocolate frosting would also work well too as it's a pretty neutral vanilla/butter flavoured cake! :)

Generally eggs can be replaced in recipes where eggs are not one of the main ingredients. You may find large cake recipes that call for one or two eggs. However in this fairly small cake there are five eggs. So the eggs are important for taste and texture. If you use an egg replacement in this, you will get a very different final result. If you cannot have eggs, please look for another recipe. All the best.

This looks so yummy! If i were to do this using 250g butter, i suppose the flour and sugar would also be 250g. How about the oil and eggs and baking powder do i need to use please? and also how much milk?

I tried this cake and it was super moist and i baked it in a 10 inch pan so it was flatter and maybe at a slighter higher temperature. Had a slice while it was hot it’s tasted perfect not very sweet though. Please tell me if i can add orange peel or lemon zest to it and any other cakes that can be made from this cake? like the 3 milk cake? can this be made in a bundt pan? and if yes what size? how is this different from your vanilla cake recipe? thank you, awaiting reply.

Hello MK when I heard butter cake I was like wow I love the butter cake from California pizza kitchen I don’t know if you’ve tried it or has anyone tried it and that is like delicious I wondered if this is the same for some reason when I take a bite of the butter cake at the restaurant it has like a sugary topping have you tried their cake, it doesn’t matter. Hi Leone! :D I am so so happy to hear you're enjoying the content :D when it comes to baking, I think it depends on what kind of oven you have and the settings they offer. I myself use a fan forced oven which means both elements are on, but the fan helps move the air around resulting in a more evenly baked cake. but if you don't have a fan forced oven then using the bottom element works best to prevent an overbaked cake :)

Hi there! :) I know the 3tsps seems a lot but trust me it provides a great lift for this cake and gives you a nice fluffy texture :) and you can make your own buttermilk by adding a tablespoon of vinegar or lemon juice to a cup of milk and letting it sit for 10 minutes. Hope that helps :)

May i know if you remove the cake immediately from the pan or you let it cool on cooling rack (how many minutes you let them cook) Do you place the top portion of cake on the cooling rack?
Letting a cake cool a little bit helps it not stick when you try to take it out of the pan. When it's still warm, it's a little damp and sticky per sa'.

can you layer this cake? I baked one butter cake sponge yesterday and was going to layer it but I broke into pieces when I was removing it from the cake tin.could that be due to the cake being just out of the oven?
Hi there! :) Yes you can totally use this for layer cakes :) and hmmm the cake shouldn't fall apart, but yes it could be that the cake was a little too hot. Try letting it cool in the tin for about 15 minutes or so and then turning it out of the cake tin. If you feel like it's going to break, then just let it cool down in the pan for longer so everything kind of solidifies :)
