For really good oven wings start them on a low temp of 225 for 30 minutes then hit them with a high heat of 425 for around 40 minutes. You'll get a wonderful crunchy skin with a juicy flavorful wing
Still put them in when frozen ?

I like to cook them until they're crispy and caramelized then sauce them and then put them back under the broiler to make the sauce all gooey and caramelized then take them out and give them a bit more sauce

The best way to make wings is to fry them, sauce them, toss em on a hot grill (caramelize first layer of sauce and get grill marks) then toss them in sauce a second time. Also dry brining them before grilling, roasting, smoking is always a great idea.

To be honest, they are all soggy now that they've all been soaked. You gotta do a light breading, deep fry and only apply sauce at the moment you serve, anything else is amateur hour.

For the wings that flew off the cooking surfaces and hit the floor, Just tell Max that its special house seasoning and give it to him. Lol! The wings look great!
When making sauce like that, don't let it boil. Once the butter breaks, the sauce goes from creamy to oily. You wanna keep the butter emulsified.

Good catch and great advice Andre. I was making this and thought the same thing and did not bring it to the boil. It's a perfect consistency ready for the wings once butter melts! I searched the comments and found your reply so no need for me to repost.

One thing for sure...nothing beats deep frying. That's the best way to get the skin crispy enough (without over-drying) so that it stays crispy after getting covered in sauce.

I always double fry my wings, that way the oil heats back up to 350, and you will get a nice crispy skin.

Love this show! 5th option: kiss those smoked wings in the deep fryer.
As a resident born and raised in Buffalo, while these wings may be tasty, none of them were done enough or done properly. Step 1, extra crispy or don't have wings. They need to be crunchy levels of crisp, but no batter or breading of any kind. I highly recommend a deep fryer for at least 11-15 mins. Step 2, keep the sauce classic, just butter and hot sauce, if not just straight hot sauce. Step 3, toss to coat, don't stir. The use of the spoon will damage the crispyness of the skin as well as its simply easier to do. Get a bowl with more sloping sides, not so wide, and toss like you would with a pan and you don't have a spatula around.
As always, I do still leave a like, but you Cali folk have a lot to learn about how we operate!
